Sunshine Cake (pineapple)
2 cups flour
2 cups sugar
2 tsp baking soda
2 eggs
1 tsp vanilla
¼ cup sour cream
1- 20 oz can crushed pineapple (not drained)
(reserved ¼ cup of pineapple for icing)
Whisk together dry ingredients. In separate bowl, whisk together eggs, vanilla and sour cream til smooth. Add sour cream mixture and pineapple to dry ingredients. Mix on medium speed until just combined. Pour into greased 9x13 pan. Bake at 350 degrees for about 45 minutes until the top is golden and only a few crumbs stick to a toothpick when inserted in the middle. With the round end of a wooden spoon, poke holes in the cake. ( I usually do 10 to 15 holes.) Let cake cook 5 minutes and then put a thin layer of icing, letting it seep into the holes and around edges of cake. Let cake finish cooling and ice with remaining icing.
Sunshine Icing
2 pkg softened cream cheese
1 stick unsalted butter softened
1 lb powdered sugar
Zest from 1 lemon
*OPTIONAL ADDITIONS*
1 cup chopped pecans
OR
1 cup toasted shredded coconut (this is MY favorite addition)
Beat cream cheese & butter until fluffy. Mix in pineapple and lemon zest. Beat in powdered sugar. If adding nuts or coconut, stir in now. Use to ice the Sunshine cake.
*Icing will NOT be very stiff*

Sunshine Pineapple Cake
Ingredients:
Cake:
• 1 box yellow cake mix
• 4 eggs
• 1/2 cup oil
• 1 (8 oz) can crushed pineapple with juice
Frosting:
• 1 (8 oz) container whipped topping, thawed
• 1 small box instant vanilla pudding
• 1 (8 oz) can crushed pineapple with juice
Instructions:
Preheat oven to 350 degrees. Spray a 9×13 pan with cooking spray.
In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice. Mix well.
Pour into prepared baking pan and bake for 25-30 minutes.
Allow to cool completely.
In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice.
Spread over the top of cooled cake.
Serve and Enjoy!
