Pig Pickin' Cake

Ingredients
Cake:
Nonstick baking spray, for the pan
One 18.25-ounce box yellow cake mix
8 tablespoons (1 stick) salted butter, softened
1 teaspoon vanilla extract
4 large eggs
One 23.5-ounce jar mandarin oranges, drained and 1/2 cup juice reserved
Topping:
4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1 1/2 cups chilled heavy cream
2 teaspoons vanilla extract
One 20-ounce can crushed pineapple, drained
Directions
For the cake: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch cake pan with baking spray.
Combine the cake mix, butter, vanilla, eggs and 1/2 cup reserved mandarin juice in the bowl of an electric mixer and beat for 4 minutes on medium-high speed. Add 1 1/2 cups of the drained orange slices and beat again until the oranges have broken into small pieces, about 1 minute. Transfer the batter to the prepared cake pan and bake until golden brown and set, 25 to 27 minutes. Allow to cool completely, then turn out onto a large platter.
For the topping: Cream together the cream cheese and confectioners' sugar in the bowl of a stand mixer fitted with a paddle attachment, 1 to 2 minutes. Remove the mixture to a small bowl. Add the cream and vanilla to the stand mixer bowl and switch to the whisk attachment, then whip until soft peaks form, about 2 minutes. Add the cream cheese mixture, distributing it evenly around the bowl. Whip until stiff peaks form, 3 to 4 minutes. Fold in the pineapple.
Spread the frosting evenly over the cooled cake and refrigerate for at least 2 hours. Garnish with the remaining mandarin orange slices.

Mandarin Orange Cake - Family Recipe
This is my Momma's recipe.
Mandarin Orange Cake Recipe:
Ingredients:
1 box yellow cake mix
2 - 3.4 oz instant vanilla pudding
1 cup vegetable oil
4 eggs
10 to 11 oz jar or can of mandarin oranges with juice
1 (20 oz) crushed pineapple with juice
1 8 oz whipped topping (Cool Whip)
Directions:
Beat cake mix, 1 box of pudding mix, oil, eggs and mandarin oranges with juice but take out a 8 to 10 orange slices and set aside for garnishing the top of the cake with for 2 minutes or until smooth.
Oil and Flour cake pans well or spray with Bakers Joy - (2) 8 inch rounds or a 9x13 inch pan.
In a preheated 350 degree oven bake for 30 to 40 minutes or until golden brown.
Cool for an hour.
Frosting/Topping:
Mix whipped topping, the other box of instant pudding and whole can of pineapple undrained together well. If round cakes put half the frosting on the middle then the rest on top then around egdes. If a 9x13 inch then put all the frosting on top of cake. Cake can stay in pan.

Hey Y’all I hope y’all enjoy this recipe, it’s another crowd pleaser.
My Father in law would have me make this for his birthday every year. He is no longer with us here on this earth in body, but I cannot make this without thinking of him. It puts a smile on my face each time I make it thinking of all the times this cake brought a smile to his. I hope it brings a smile to someone special in your lives.
Pea Pickin Cake Ingredients:????
Pre heat oven to 350 degrees
1 box yellow cake mix
4 eggs room temp ( I used 4 because the recipe called for 4 but honestly y’all can use 3 and save yourself an ????and it will be just fine)
1 stick room temp butter (your choice of brand)
1 11oz can mandarin oranges in juice
Mix ingredients together and place in 2 8 inch round cake pans or 13x9 rectangle baking dish for single layer sheet cake if you prefer. Bake for about 20 minutes or until tooth pick inserted comes out clean. Ovens do vary.
FROSTING :
1 12 oz container cool whip????
1 box large vanilla instant pudding
1 20 oz can crushed pineapple with the juice
(I add pineapple last)
I place my cake in the fridge so it is cool before I frost with the cool whip frosting
Note: I also save just a little of the mandarin orange juice so I can poke holes in the cake while it’s cooling for extra moisture. I would not add to much though or you will have a soggy cake:

Ingredients: ( I use Baking Pan Size: 18X7 cm)
3 / Egg yolks
160g / Powdered sugar
8g / Vanilla sugar
50g / Vegetable oil
4-5 / Mandarins ( make juice about 200ml)
180g / All-purpose flour
8g / Baking powder
3 / Egg white
2 / Mandarins (cut into slices)
In preheated oven bake for about 45 minutes (at 180°C/356°F)
