How To make Summer Garden In a Jar
4 c Carrots, in 1/2 inch slices
4 c Green beans
10 c Cauliflour florets
1 c Onion rings
4 c Celery sticks (2 x 1/2 inch)
4 c Green pepper squares, 1 inch
6 c Sweet red pepper squares,
- 1-inch 2 c Pickling salt
12 c Water
12 c White vinegar
2 c Granulated sugar
1 tb Peppercorns
2 ts Coriander seeds
1/3 c Mustard seeds
2 tb Tumeric
2 c Small unpitted black olives
In a large saucepan or preserving kettle, combine carrots, onions, celery, red and green peppers, beans and cauliflour. Sprinkle with salt and mix well, add water. Cover with a plate (to keep vegetables submerged)and let stand for 8 hours or overnight. Drain, rinse under cold water and drain again thoroughly. In a larger perserving kettle, combine vinegar, sugar and spices. Bring to a boil, add vegetables and olives. Return to a boil , reduce heat and simmer, covered, for 10 minutes or until vegetables are tender. Pack vegetables into hot sterilized 1 pint jars; ladle liquid over vegetables leaving 1/8 inch headspace. Seal. Process 15 minutes in boiling water bath. Serve with sandwiches, cold meats and cheeses. Use any left over syrup in cabbage salads. Makes 20 pints. Source: Canadian Living

RECIPE
2 pints (Pink Lemonade) Blueberries
2 TBSP lemon juice
1 3 Oz packet of 100% fruit pectin (dry)
5 1/4 cups sugar
(1) Crush blueberries, saving about 1/8 not being crushed
(2) Combine blueberries and lemon juice in saucepot
(3) Stir in Fruit Pectin
(4) Bring mixture to boil, stirring constantly
(5) Add sugar, stirring to dissolve
(6) Return mixture to a rolling boil
(7) Boil hard 1 minute, stirring constantly
(8) Remove from heat
(9) Skim foam if necessary
(10) Ladle into canning jars
(11) Wipe rims of jars
(12) Put lids and bands on jars
(13) Place in Pressure Boiler or Water Bath
(14) Boil for no shorter than 10 minutes
(15) Cool for 12 to 24 hours
(16) Remove bands for storage if vacuum has sealed

DIY Summer In A Jar
Make a fun summer snow globe!
You will need:
Jar with a lid
Super glue
Different types of one colored glitter
Water
1 Tbsp. of corn syrup
Remove the lid from the jar.
Spread out super glue on the lid.
Then pour in some small rocks and shake it around to cover the lid. Add a second layer of super glue and rocks.
Let it dry for a few minutes.
Then super glue some small beach items and let them dry.
Pour in water and 1 Tbsp. of corn syrup in the jar and stir it well.
Then add in different types of one colored glitter.
Place the lid back on the jar and tighten it.
GARDEN TO JAR | Sweet Onion Jam
Let's go harvest the last of our Sterling Onions and Come on into my kitchen to make some Sweet Onion Jam! NOTE: this recipe takes time so ensure you are in a distraction free environment so you don't burn your onions as you cook them low and slow.
Sweet Onion Jam Recipe: (Based on my measurements reduce or increase as desired for your scale)
24 Cups Chopped Onions
6 Tablespoons Butter
1.5 Cups Brown Sugar
3 Tsp Salt
3 Tsp Cardamom
3 Tsp Cinnamon
1 Cup Balsamic Vinegar
1 Cup Apple Cider Vinegar
6 Tablespoons Maple Syrup
Cook down onions in butter over low to medium low heat until onions have carmalized, stirring continuously to avoid burning onions. This will likely take no less than 45 mins, for my quantity over low heat it took just at 2 hours. Next mix in your spices, vinegars and maple syrup. Reduce down again until slightly thickened, will still appear somewhat running but more like syrup. Jar up in pint sized or less jars to 1/4 inch headspace. Process in water bath canner for 10 mins.
Use as a glaze on meats, serve as a condiment on sandwiches, serve with cheese and crackers, the possibilities are endless.
