How To make Sugarless Applesauce Cake
1 c Raisins
1 c Dried fruit
-diced 2 c Water
2 c Flour
1 ts Baking soda
1/2 ts Salt
1/2 ts Nutmeg
1 1/2 ts Cinnamon
2 Egg
-beaten, or equilavent -egg substitute 1 c Unsweetened applesauce
2 tb Liquid sweetener
3/4 c Vegetable oil
1 ts Vanilla extract
1/2 c Chopped nuts
Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft. Set aside to cool. Meanwhile, in a large mixing bowl, combine flour, baking soda, salt, nutmeg and cinnamon. In another bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and reserved fruit mixture. Stir into dry ingredients and blend thoroughly. Pour into a greased 10" fluted tube pan (Bundt). Bake at 350 degrees F for 35 - 40 minutes or until the cake tests done. Makes 32 servings. Sugar-free Applesauce Cake
1 1/2 Cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cardamon
1/2 cup (1 stick) unsalted butter room temperature
1 1/4 Lite&Sweet™
2 eggs
1 cup unsweetened applesauce
Directions
Preheat oven to 350 degrees. In large bowl whisk together flour, baking soda, salt, cinnamon and cardamom. Set aside.
In another bowl using an electric mixer, beat butter and Lite&Sweet™ until light and fluffy. Add eggs, one at the time beating until combined. With mixer on low speed, gradually add the flour mixture; beat until combined. Lastly beat in the applesauce.
Bake for 50 to 60 minutes until toothpick comes out clean. Dust with Sugar-free Lite&Sweet™ before serving, if desired.
Sugar-Free Apple Butter
2 tablespoons unsalted butter
3 pounds assorted apples, peeled, cored, and cut into quarters
3 cups apple cider
1/4 cup Lite&Sweet™
Juice of 1/2 lemon
1 teaspoon lemon zest
1/2 teaspoon ground cinnamon
Directions
In a large heavy sauce pan over medium heat melt the butter and add the apples. Cook apples until slightly softened about 5 minutes. Add cider and Lite&Sweet™, bring to a boil and reduce heat to simmer partially covered stirring occasionally until soft for 30 minutes.
Preheat oven to 250 degrees and mash softened apples with potato masher. Remove from heat and add lemon juice, lemon zest, and cinnamon. Puree mixture in a blender until smooth.
Pour mixture into baking dish and bake stirring occasionally until thickened for 3 1/2 hours.
Allow to cool before serving.
Apple butter can be kept in airtight container for 2 weeks.

INGREDIENTS:
2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon (optional)
2 large eggs
1/3 cup honey
4 tablespoons coconut oil
130 gram, 5 Oz (1/2 cup) greek yogurt
2 teaspoon pure vanilla extract
2 medium apples
1/2 cup chopped pecans
INSTRUCTIONS:
1. Grate the apples. Chop the pecans; set aside.
2. Preheat the oven to 340°F (170°C), and grease with oil a 9 inch loaf pan.
3. In a small bowl, combine whole wheat flour, baking soda, baking powder, cinnamon and kosher salt. Mix and set aside.
4. In a large bowl, add 2 eggs and whisk. Add honey, coconut oil, greek yogurt and pure vanilla extract. Whisk.
5. Add the dry ingredients and mix until well combined.
6. Add the grated apples and the chopped pecans to the batter. Mix gently.
7. Pour the batter on the loaf pan.
8. Bake for 40-50 minutes or until a tester inserted into the center comes out clean.
9. Let it cool in the pan for at least 20 minutes. Slice and serve. Enjoy :)
