4 Green peppers, med
1/4 ts Pepper
1 1/2 lb Ground beef
1 1/2 c Rice
2 tb Onions
1 c Corn, whole kernel
1/2 ts Salt
8 oz Tomato sauce
Cut tops off peppers and clean inside. Cook peppers in water to cover for 20 minutes. Brown ground beef and onions. Add seasonings, rice, corn, and
tomato sauce. Heat until bubbly. Spoon filling into peppers; place in casserole dish. Place extra filling, if any, around peppers. Bake at 350 degrees for 20-25 minutes. Mrs. Robert F. Lewis

Stuffed Pepper Casserole Recipe:
- in a large non stick pan medium - high heat
- 1 tsp. of olive oil
- 1 medium white onion finely diced
- 1 large red and green bell pepper finely diced
- pinch of salt
- saute 5 minutes
- add 2 cloves of garlic finely diced stir 1 minute
- mix in 1 Lb. lean ground beef cook 5 minutes
- add 1 Tbs. Italian seasoning
- 1/2 tsp. pepper
- 1/2 tsp. red pepper flakes
- 1 28 oz. can of diced tomatoes ( 796 ml. )
- 2 cups of cooked white rice ( 1 package Uncle Ben's Bistro Express, Basmati )
- 1 oz. soy sauce
- 1 cup of fresh grated parmesan cheese
- mix well, bring to a boil
- while stirring cook at least 6 minutes to reduce some liquid, this is important or the casserole will be too moist
- transfer contents into a 9 X 13 lightly greased baking dish
- spread evenly 2 cups of grated Italian mix cheese on top
- cover with tinfoil and bake at 375 F for 30 minutes
- remove the tinfoil continue cooking until the cheese is golden brown, 10 minutes
Serve with garlic toast

Stuffed Bell Pepper Casserole
Ingredients:
2 or 3 lbs Ground Beef
1 or 2 Cups chopped Bell Peppers
1/2 Cup chopped Onions
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
Salt or Cajun Seasoned to taste
1 tsp black pepper
3 tsp Worcestershire Sauce
1 16 oz. can Crushed Tomatoes or Rotel
1/2 Cup Beef Broth
2 Cups Cooked Rice
2 Cups Sharp or Cheddar Cheese
1 Cup Pepper Jack Cheese
Bake @350 degrees for 20-25 minutes. Let Cool to set for 10 minutes.

This easy Stuffed Pepper Casserole is made with SIX ingredients in ONE skillet! A hearty and healthy dinner recipe

INGREDIENTS
375 grams ground Italian sausage casings removed, one small package
2 cups chopped bell peppers any color
2 cups low sodium chicken broth
1 cup tomato sauce
3/4 teaspoon salt
1 pinch black pepper
1 cup long grain white rice rinsed
1 cup shredded mozzarella cheese
INSTRUCTIONS
In a large skillet, brown Italian sausage. Add peppers and cook until crisp-tender, about 5 minutes.
Add broth and use a wooden spoon to scrape any browned bits off the bottom of the pan.
Add tomato sauce, salt and pepper.
Rinse rice well under cold water and add to the skillet.
Stir well and bring to a simmer. Cover, reduce heat slightly, and simmer for 15-20 minutes until rice is cooked through.
Sprinkle with cheese, cover and let rest for 5 minutes before serving.
