How To make Strawberry Oatmeal Muffins
1 c Instant oatmeal
1 c Cake flour
1 tb Baking powder
1 t Cinnamon
1/3 c Brown sugar
2 tb Diced crystalized ginger
1/4 c Raisins
1 1/2 Egg whites
1 c Nonfat milk
1/2 c Diced strawberries
Preheat oven to 400 deg f. Spray muffin cups with nonstick spray. Combine oatmeal, flour, baking powder, cinnamon, and brown sugar in a bowl. Mix ginger, raisins, egg whites, milk and strawberries in another bowl. Add to dry mix and stir to combine. Divide the batter between the 12 muffin cups. Bake 15 minutes or until golden. Remove from oven and cool before serving. Makes 12 muffins - each muffin ?08 calories, .5 g fat, .3 mg chol, 102 mg sodium, 3 g protein, 23 g carbos. Percent of calories from fat ? %

Healthy Strawberry Muffins Recipe (kid-friendly!) // This is a great recipe for a healthy breakfast for your kids - even if you have a toddler and/or a picky eater! I'm a Registered Dietitian so I created these specifically with nutrition in mind -- but I know kids will only eat them if they actually taste good. So I made sure these are great-tasting, too! Not flavorless or dry, as I know the healthy muffins tend to be.
I used frozen strawberries to make this recipe as simple as possible. Frozen strawberries, whether you use organic strawberries or conventional strawberries for these muffins, have great nutrition since they are picked at the peak of their ripeness and freshness. And, you don't have to spend time cutting off the tops! Plus, you can make these delicious strawberry muffins any time of the year -- you do not have to wait on strawberry season.
