The Crispiest, Tastiest Crispy Chilli Beef EVER!
Crispy chili beef is my favourite dish from the Chinese takeaway, so it has a lot to live up to. I'm going to show you how to get that lovely craggy exterior and even better, we don't need to use the deep fryer! Perfect crispy strips of beef in a tangy spicy sauce, mmmm soo good!

Ingredients:
• ¾ lb (360g) thin cut sirloin steaks - (approx 3 steaks) cut into thin strips*
• 1 small egg
• 4 tbsp cornflour (cornstarch)
• ¼ tsp salt
• ¼ tsp black pepper
• 1/8 tsp white pepper
• 4 ½ tbsp sunflower oil, divided
• 1 medium onion, sliced into thin strips
• 1 red chilli – finely sliced- discard the seeds if you don't like it too hot
• 1 tsp minced ginger
• 3 garlic cloves - peeled and minced
• 2 tbsp rice vinegar
• 3 tbsp dark soy sauce
• 2 tbsp tomato puree
• 6 tbsp caster (superfine) sugar
• 2 tbsp tomato ketchup
• 2 tbsp sweet chilli sauce
Process:
• Place the steak strips in a bowl and add the egg. Mix together to thoroughly coat the steak in the egg.
• Add the 4tbsp cornflour, ¼ tsp each of salt and pepper and 1/8 tsp of white pepper.
• Toss together to coat the steak. It will be a sticky mixture.
• Heat 3 tbsp of the oil in a large frying pan (skillet) or wok over a high heat until very hot.
• When the oil is hot, add the beef in a strip at a time and spread it out. You will probably need to work in 2 batches.
• Fry the steak until dark brown and crispy. Try not to move the meat around too much as this reduces the amount of crispiness you get. It generally takes about 5 or 6 minutes to crisp up the beef, with about 3 or 4 stirs during that time.
• Using a slotted spoon, remove the beef from the pan and place it in a bowl lined with kitchen roll to soak up excess fat.
• Add a further tablespoon of oil and repeat - cooking the second batch of beef and then placing in the bowl with the first batch.
• Once you’ve removed all the beef from the pan, Its time to make the crispy chilli beef sauce, add the remaining ½ tbsp of oil to the pan and turn the heat down to medium.
• Add in the sliced onion and cook for 2 minutes until slightly softened.
• Add in the finely chopped chilli, 1 tsp minced ginger and 3 minced cloves of garlic and cook whilst stirring for 30 seconds.
• Add the 2 tbsp rice vinegar, 3tbsp soy sauce, 2 tbsp tomato puree, 6 tbsp sugar, 2 tbsp tomato ketchup and the 2 tbsp sweet chilli sauce to the pan. Turn up the heat and let it bubble for a couple of minutes until the sauce starts to reduce a little.
• Add the beef back in, give it a stir and heat through for 1-2 minutes – until the beef is hot.
• Serve with Egg fried rice, boiled rice or noodles.

Welcome to Xiao's Kitchen. My name is Xiao Wei, ever since my Mother taught me how to cook at an early age, I have always had a strong passion for Cooking. My family still live in Inner Mongolia in the northern part of China, where I visit each year and pick-up new Asian/Chinese recipes.
This is one of my favourite dish with tender beef and the heat from chilli & green peppercorn. Try it if you like spicy food!
Ingredients:
600g Beef Joint
3 Tbsp Green Peppercorns
2 Star Anise
1 Cinnamon Stick
1 Onion
6 Red Chilli Peppers
6 Tbsp Soy Sauce
6 Cloves Garlic
2cm Ginger Root
Small Bunch Coriander
1 Tbsp Sesame Oil
Salt to Taste
Method:
1. Place the beef in a pan with 2 to 3 litres of water
2. Add star anise, cinnamon stick, ½ green peppercorns and soy sauce
3. Boil for 1½ to 2 hours on medium heat until beef is tender
4. Remove from water onto a dish to rest
5. Slice garlic, ginger, chilli peppers and onion and roughly chop coriander
6. Slice beef thinly
7. Heat 2 Tbsp of oil in a wok
8. Add the remaining green peppercorns, garlic, ginger and beef and stir-fry for 5 minutes
9. Add soy sauce, chilli pepper and onion
10. Drizzle with the sesame oil, add coriander and serve

Szechuan beef recipe ( Chinese cuisine ) - spicy black pepper beef - tasty and yummy food
Today I’ll show you, how to make Szechuan beef stir fry.

Szechuan beef recipe - spicy black pepper beef
Ingredients :
500 gram beef( very good cut meat) ( tiny sliced )
1 red bell pepper ( Julienne cuts)
1 green bell pepper ( Julienne cuts)
2 Carrots ( Julienne cuts )
1 yellow onion ( sliced )
2 stalk green onions ( 1 cm cuts )
1 1/2 tbsp sliced garlic
1 1/2 tbsp minced ginger
1 tsp black pepper
1 tsp sea salt
2 tbsp salty soy sauce
2 tbsp ketchup
2 tbsp chili oil
2 tbsp toasted sesame oil
3 tbsp avocado oil or any oil with high smoke points
Instructions :
1. On the stove heat a wok or pan on high, add 2 tbsp oil then add meat, stir fry until no juice comes out or until change the color.
2. Add into the pan 1 tbsp oil then add sliced onion, stir fry for 2 minutes then add vegetables ( bell peppers and carrots ) stir well then add garlic and ginger and stir fry for another 2 minutes.
3. Add remaining ingredients ( salty soy sauce, ketchup, chili oil, green onions and sesame oil ) mix well and continue stir fry for 1 minute and done.
4. Ready to serve with hot steamed rice.
Note :
1 tsp = 1 teaspoon ( 5 ml )
1 tbsp = 1 tablespoon ( 15 ml )

Tumis Szechuan beef
Bahan :
500 gram daging sapi (potongan daging yang sangat baik) (iris tipis dan kecil)
1 paprika merah (potongan Korek api )
1 paprika hijau (potongan Korek api )
2 Wortel (potongan Korek api )
1 bawang Bombay (diiris tipis )
2 tangkai daun bawang (potongan 1 cm)
1 1/2 sdm irisan bawang putih
1 1/2 sdm bawang jahe cincang
1 sdt lada hitam
1 sdt garam laut
2 sdm kecap asin
2 sdm saus tomat
2 sendok makan minyak cabai
2 sdm minyak wijen panggang
3 sendok makan minyak alpukat atau minyak apa pun dengan titik asap tinggi
Instruksi:
1. Di atas kompor panaskan wajan atau panci dalam api besar, tambahkan 2 sdm minyak lalu tambahkan daging, tumis sampai tidak ada jus yang keluar atau sampai berubah warna.
2. Tambahkan ke dalam wajan 1 sdm minyak kemudian tambahkan irisan bawang, tumis selama 2 menit lalu tambahkan sayuran (paprika dan wortel) aduk rata kemudian tambahkan bawang putih dan jahe dan tumis selama 2 menit lagi.
3. Tambahkan sisa bahan (kecap asin, saus tomat, minyak cabai, daun bawang dan minyak wijen) aduk rata dan terus tumis selama 1 menit dan selesai.
4. Siap di hidangkan dengan nasi panas.

Sichuan Spicy Beef Chilli Hot Pot (Chinese Style Cooking Recipe)

You can use less chilli or without if prefer your food not too spicy
Do not boil the beef for too long as it will become tough and chewy.
Ingredients:
300g Beef Fillet
½ Chinese Cabbage
6 – 8 Dry Red Chillies
½cm Ginger
4 – 6 Cloves of Garlic
1 Tbsp Red Peppercorns
2 Spring Onions
1 Tbsp Cooking Wine
1 Egg White
1½ Tbsp Cornflour
2 Tbsp Spicy Chilli Bean Sauce
1 Tbsp Soy Sauce
1 Tbsp Chicken Powder
Salt to your Taste
Method:
1. Thinly slice the beef
2. Place beef in a mixing bowl and add the cooking wine
3. Add the egg white and the cornflour
4. Then mix.
5. Add 1 Tbsp oil to the bowl, then mix well
6. Leave to marinate for 20 minutes
7. Cut cabbage into bite-size pieces
8. Tare the leaves into bigger pieces
9. Roughly chop the chillies
10. And the spring onions
11. And finely chop the ginger and garlic
12. Heat 1 Tbsp oil in a pan, add chillies and red peppercorns
13. Fry for 2 minutes on low heat.
14. Remove from pan
15. And grind to coarse
16. Heat 1 Tbsp oil in a wok
17. Add the spicy bean sauce, ginger and spring onions
18. Fry for 3 minutes
19. Add soy sauce
20. Add 500ml of boiled water
21. Bring to the boil
22. Add cabbage and boil for 2 minutes
23. Then remove the cabbage into a large bowl
24. Add the beef to the wok
25. Wait for 1 minute then stir.
26. Boil for 4 minutes until beef is separated from each piece and turned to pale colour
27. Add salt and chicken granules
28. Then stir
29. Transfer into the bowl with the cabbage, add the coarse chilli, red pepper and garlic.
30. Garnish and serve
