How To make Stir Fried Salted Beef with Hot Chili
2 c Shredded Flank steak or
-beef tenderloin 1 ts Salt
1 tb Nam pla (fish sauce)
1/2 c Chili cut into strips
1/2 c Celery cut into 1 inch
-lengthwise 1 ts Maggi sauce
1 c Oil
"A few years ago, the Chinese restaurant in the Amarin Hotel served this dish which I copied. The Amarin Hotel was a small hotel with personalized services and very popular with many regular guests. I worked for a short time at the dress shop there. The Amarin Hotel is no more, there is a big modern shopping plaza in its place now. The shopping plaza has the first Macdonald Hamburger outlet in Thailand situated there. It is doing very well. I still miss the Amarin." Marinate beef with salt and nam pla for 1 hour. Heat frying pan and cook the salted beef (without oil) for 5 minutes. Remove and drain on paper towel. Heat the oil in a wok over high heat to fry the salted beef strips until crisp. Drain oh paper towel. Heat the remaining oil. Stir-fry hot chili, shredded celery and green onion for 1 minute. Add fired crispy beef. Season with Maggi sauce. Pour onto serving plate. This delicious Chinese Crispy Chilli Chicken made with fried chicken strips tossed with delicious spicy-sweet, honey chilli sauce. You can create Chinese takeaway-style crispy chilli chicken at home with simple ingredients!

???? Ingredients
▢350 g Chicken breast ( about 12oz ) cut into thin strips about
▢1 Egg white
▢1 cup Corn starch
▢1 tbsp Garlic finely chopped
▢2 tsp Oil
▢Oil for frying Vegetable or neutral flavour oil
Chicken Marinade
▢1 tbsp Light soy sauce
▢1 tsp Garlic paste or finely grated garlic
▢1 tsp Sesame oil
▢2 tsp Sugar
▢½ tsp White pepper or black pepper
Chilli Sauce Mixture
▢3 tbsp Sriracha sauce Or hot chilli sauce ( see details in note )
▢2 tbsp Tomato ketchup
▢2 tbsp Honey Or sugar
▢1 tbsp Lime
▢¼ tsp Chilli flakes optional
Garnish
▢1 Red chili pepper cut thin slices
▢2 Spring onions cut thin slices

Place the chicken strips in a bowl and marinade for 10-15 minutes. Mix all the sauce ingredients in a small bowl and set it aside.
Next, add egg white into the chicken and mix it well. Then add the corn starch and coat each chicken piece. ( Add more corn starch if needed. )
Deep fry the coated chicken pieces and set aside for 4-5 minutes. Then fry it again for another 2-3 minutes until crispy golden.
Sauté the chopped garlic for few seconds. Then pour the sauce mixture in and stir for few seconds, place the fried chicken strips back in the wok.
Combine the sauce and chicken pieces well and sprinkle fresh chilli slices and spring onions.
Transfer to serving plate and serve immediately.

Super Spicy Szechuan Chicken
Marinade Ingredients:
3 tsp of corn starch
1 tsp of salt
1 Tbsp. of rice wine
1/2 tsp of white pepper
1 Tbsp. of soy sauce
1 shredded scallion
2 slices of ginger
4 chicken thighs, chopped into bite-sized pieces
Other Ingredients:
vegetable oil for frying
2 Tbsp. of Szechuan peppercorn
5 dried red chilies, chopped
50 whole dried red chilies
4 slices of ginger
1 scallion, chopped
1/3 cup of peanuts
1/2 tsp of sugar
1/2 Tbsp. of rice wine
1 Tbsp of sesame oil
chopped scallions as garnish
Directions:
Combine marinade ingredients in a bowl, add the chopped chicken. Marinate for 10 minutes.
In about 1 1/2” of oil, fry the chicken until browned and crispy. Remove and set aside.
Heat oil in a wok or a large pan. Add the Szechuan peppercorn and dried red chilies. Fry until fragrant. Add the rest of the dried red chilies, ginger, scallion and peanuts. Fry for a minute. Add the fried chicken pieces, sugar, rice wine and sesame oil. Toss to coat.

Easy way to make Beef Stir Fry with Veggies~ Restaurant Style ~ Cook with Me
Beef stir fry or peppered steak with veggies is a staple in Chinese cuisine and one of my family’s favorites so I had to hook them up with this restaurant style dish at home! You will love it! Substitute the steak with any meat of your choice such as chicken, lamb, pork or even tofu!
Ingredients used
2 lbs steak (cut into thin strips)
1 medium red bell pepper
1 medium green bel pepper
1 medium yellow/ orange bell pepper
1 Tbsp Sesame seed oil
1Tbsp paprika
1 Tbsp freshly chopped garlic
1 Tbsp freshly chopped ginger
4 Tbsp Worcestershire sauce (half for the steak marinade and the other half for the stir fry)
4 Tbsp low sodium soy sauce (1 Tbsp for the marinate and 3 Tbsp for the stir fry)
White pepper (to taste)
Freshly ground black pepper
Chicken bullion
Salt to taste ( Note: most of the spices are salty)
3 Tbsp corn starch ( 1 Tbsp for the marinade and 2 Tbsp to thicken stir fry - dissolve the 2 Tbsp in 3/4 to 1 cup water depending on how thick it light you want the sauce
