How To make Spinach Stuffed Shells
1 pk Large macaroni shells
1 sm Onion, chopped
10 oz Frozen chopped Spinach
1 tb Instant Chicken bullion
1/2 ts Garlic powder
1/8 ts Dried thyme
1 1/2 c Low-fat ricotta cheese
1 c Low-fat cottage cheese
2 Eggs
48 oz Jar spaghetti sauce
8 oz Shredded mozzarella cheese
** Preheat oven to 350 degrees. 1. Cook spinach as directed on package; drain well. 2.
Cook shells as directed; drain, cool. 3. In a large bowl, mix chopped onion, chicken bullion, garlic powder, thyme, ricotta cheese, cottage cheese, eggs, and cooked spinach. 4. Using your hands and a large spoon, stuff shells with the mixture, and lay in rows in a 13" x 9" baking pan. 5. Spread spaghetti sauce over the shells in the pan. Sprinkle shredded mozzarella on top. 6. Bake at 350 degrees for 25 - 35 minutes, until warm in the center, and mozzarella cheese has melted. -----

16-20 jumbo pasta shells
2 tablespoons olive oil
4 cloves garlic (minced)
4 cups packed fresh spinach leaves (roughly chopped)
32 oz ricotta cheese
1 cup mozzarella cheese (shredded)
1 cup grated Parmesan cheese (plus more for serving)
2 large eggs (beaten)
1 teaspoon onion powder
1 teaspoon dried Italian herbs
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 cups marinara sauce

8 oz ricotta
1/2 cup shredded parmesan cheese
1/2 cup mozzarella
5.2 oz boursin garlic and herbs cheese
1/4 cup chopped parsely
1 tsp lemon zest
salt, pepper, garlic, onion powder,
1 egg
Red Sauce:
4 cloves fresh chopped garlic
2 28 oz cans tomato sauce
fresh basil
2 tsp sugar
1 tsp garlic paste
1 lb jumbo pasta shells
salt, pepper, garlic, onion powder, red pepper flakes
3 tbsps olive oil
Directions:
Begin by making your sauce. Add olive oil to a sauce pan over low heat. Add chopped fresh garlic and simmer for 3-4 minutes. Do not burn the garlic - you want to infuse the flavor into the olive oil. Add red pepper flakes after 3 minutes and simmer.
Next, add in your tomato sauce and fresh basil. You can add garlic paste as well to enhance the overall garlic flavor, if that’s your thing. Season to taste and add a pinch of sugar as needed to balance acidity. Simmer on low until you need the sauce later.
For the cheese mixture, add ricotta and Boursin cheese to a mixing bowl and stir to combine. Zest 1 tsp of lemon into the cheese and add parmesan and mozzarella. Season to taste BEFORE adding the egg. Once the flavor is right, mix in the egg and add the cheese mixture to a piping bag or ziplock bag.
Boil noodles per package instructions for baked pasta shells (should only be a few minutes because they cook in the oven. ALWAYS Salt your pasta water
Drain noodles and allow them to cool for a few minutes so you can handle them. Spoon sauce in the bottom of a casserole dish and then fill each pasta shell with your cheese filling.
Once all shells are filled and placed into your baking dish, add a thin layer of sauce and top with cheese. Cover with foil and bake for 25 minutes.
Remove foil and bake for an additional 10-15 minutes or until the cheese is browned and bubbly. Serve with remaining sauce.
If you’d like to add meat to this, you can add it to your sauce and follow the same recipe. Enjoy!
Spinach Ricotta Stuffed Shells
There's no need to pre-cook shells before you stuff them. Such a pain messing around with hot floppy shells! Just bake in loads of sauce and they'll cook in the oven.

Spinach & Ricotta pasta shells
Serves: 6
Prep time: 40 min
Cook time: 40 min
Ingredients
- 6 cloves garlic, crushed
- 4 tbsp olive oil
- 700g jar tomato passata
- small bunch basil
- 1 packet of large pasta shells (Conchiglioni)
- 300g baby spinach
- 400g ricotta
- 1/6 of a nutmeg, finely grated
- 40g grated Pecorino
- 1 ball fior di latte
- 1 egg
- salt and pepper to taste
Method
1. Bring a large pot of salted water to a boil. Preheat the oven to 180°C (160°C fan).
2. In a pan over medium heat, add olive oil, garlic and a pinch of salt. Cook for 2-3 minutes until fragrant.
3. Add tomato passata and a small bunch of basil to the pan. Simmer for 10 minutes.
4. Cook pasta shells in the boiling water for 2-3 minutes less than package directions. Drain well and leave to cool for 10 minutes (don’t rinse under cold water).
5. In a pan over medium heat, add 2 tablespoons olive oil and saute the spinach with a little salt. Once cooked, leave to drain.
6. In a bowl, mix baby spinach, ricotta, nutmeg, pecorino, egg, salt, and pepper.
7. Fill each pasta shell with the spinach and ricotta mixture.
8. Pour 1/2 the tomato sauce into a baking dish. Place the filled pasta shells on top of the sauce.
9. Top with the leftover tomato sauce, some more pecorino then fior di latte and bake for 20-25 minutes until golden brown.
10. Enjoy!
