How To make Lisas Chicken Stuffed Shells
12 large stuffing shells pasta
1 8oz.pkg cream cheese
1 Tablespoon chives
2/3 cup milk
1/2 cup parmesan cheese
2 cups cooked chicken breast
shredded
1 10 oz pkg frozen broccoli :
thawed & drained
1/4 teaspoon black pepper
2 tablespoons diced pimento
1 cup Monterey jack cheese -- shredded
Cook shells till el dante. (Slightly firm) Rinse in cold water to handle, set aside. In a small saucepan warm cream cheese till melted. Stir in milk, chives and parmesan cheese. Mix till smooth. In a mixing bowl, stir together chicken, broccoli ,pepper, and pimento.Stir in 3/4 Cup of the sauce, mix well and stuff into shells. Lightly oil a 9x13" pan or spray with PAM. Stuff shells and arrange in dish. Pour over remaining sauce, top with monterey jack and sprinkle with paprika. Cover with foil and bake at 350 for 30 minutes or till hot and bubbly.

How To Make Classic Stuffed Shells
you will need...
1 package of Jumbo Shells ( 12-16 oz)
1 head of Radicchio ( finely chopped)
1/2 lb of turkey sausage
1 small sweet onion finely chopped
1 1/2 cups of Fontina cheese ( freshly grated... 1 block 1/2 works great)
3/4 cup of shredded Parmesan cheese
1, 15oz container of Ricotta cheese
2 egg whites
3 1/2 cups of Marinara sauce
Steps: Preheat oven to 375 degrees
1) boil the shells al dente only!
2) in a saute pan on the stove put 1tbsp olive oil, 1 tbsp butter and heat... add the chopped onion and turkey sausage to cook and brown
3) once the turkey sausage is cooked and brown add the radicchio stir and allow to cook down and together
4) remove noodles from boiling water, strain, and rinse heavily under cold water to stop cooking
5) make cheese mixture... combine the cheeses, egg whites, and seasonings and fold together
6) add the sausage/radicchio mixture to the cheese and fold all ingredients together
7) line a 9x13 inch baking dish with marinara sauce...
8) using a rounded spoon ( or small ice cream scoop) stuff the shells with the mixture and place them in the baking dish as close together as possible
9) pour marinara sauce on top of the stuffed shells ( approx 1 cup of sauce)
10) sprinkle cheese on top... Fontina is nice melted on top but shaved Parmesan looks and crisps up better
11) bake for 40 minutes uncovered.
12) remove and let rest at room temperature for 15 minutes.

P.S. have extra Marinara on hand incase people want more sauce :-)
