How To make Spinach Fettucini with Ginger Chicken
Ingredients

cup
shallot, chopped

garlic, clove, chopped

red pepper flakes, crushed

thyme, dried

lime, juice, freshly squeezed

mustard, dijon-style

soy-sauce, reduced-sodium
2
tablespoon
vinegar, rice wine
1/4
cup
wine, white, dry
2
teaspoon
honey
3
tablespoon
ginger, fresh, grated
1
chives, fresh, for garnish
Directions:
Preheat oven to 350 degrees. Put all the marinade/dressing ingredients in a blender and mix thoroughly as low speed. Place the chicken in a shallow baking dish. Pour half of the mixture from the blender over the poultry, reserving the remainder. Cover and refrigerate the chicken for 20 minutes.
While the chicken is marinating, bring a large pot of water to a boil over high heat. Add the fettucini and cook for 8 to 12 minutes to desired doneness.
In the meantime, remove chicken from the refrigerator. Uncover the baking dish and transfer it to the oven. Bake for about 15 minutes until the meat is no longer pink and the juices run clear.
When the pasta is cooked, remove the pot from the heat. Drain the fettucini and return it to the pot. Stir in the chicken stock and keep the mixture warm over the lowest heat setting.
Pour the cooking juices from the chicken into a saute pan. Add the squash, bell pepper, leek, broccoli, and mushrooms. Saute for about 3 minutes, just until the vegetables begin to wilt.
Transfer the pasta to a warm serving bowl, along with the vegetables. Shred the chicken on top. Add the reserved dressing and toss. Garnish with snipped chives.
Serves 4.

Chicken:
Marinate chicken breast with
1/2 tsp. of salt, pepper, garlic powder, sumac, chili flakes, and paprika. and 1/2 of ginger garlic paste. Mix well, and set aside for 30 mins.
Heat a pan, add olive oil, and sear chicken on both sides.
Sauce:
In the same pan, melt 2 tbsp. of butter, to this add 2 tbsp. of flour and mix well. add 1/2 cup of milk, and 1/2 cup of chicken stock. Stir well, add 1 tbsp. of cream cheese. Season with 1/4 tsp of salt, pepper, garlic powder and chili flakes. Mix well until it the sauce thickens.
Pasta:
boil your favourite pasta in salted water. Once the pasta is al dente, add broccoli, let the broccoli cook with the steam of the pasta.
Combine all together. Serve hot!

Recipe:
Mediterranean Chicken Spinach Feta Pasta
1 chicken breast, chopped into 1 inch pieces
1 - 10 oz bag fresh spinach, washed and drained
1/2 - 3/4 cup crumbled feta cheese
Fresh linguine
2/3 cup roasted red peppers
1/2 cup cream
8 - 10 baby tomatoes
Parmesan cheese and fresh basil for garnish
1 large onion, chopped
1 sprig rosemary
1 tbsp plus 3 tsp Mediterranean Spice mixture
I pre-make this Mediterranean spice mixture.
Recipe as follows
1 tsp thyme
1 tsp onion powder
1 tsp garlic powder
1 tsp dill
1 tsp basil
1 tsp oregano
1/4 tsp black pepper
1 tsp rosemary (if you don't have a fresh sprig to add)
Chop one large onion, Halve 8 to 10 small baby tomatoes, Wash and drain 1 - 10 oz bag spinach. set aside.
Drain roasted red peppers and chop into 1/4 inch pieces.
For pasta, put on the stove a large pot of water, season with salt, turn to high heat and bring to a boil.
Chop 1 chicken breast into 1 inch pieces. Sprinkle with 1 tbsp Mediterranean spice mix.
In a large saucepan, add 1 to 2 tbsp olive oil. Turn to high heat. When oil is hot add chopped chicken and cook till no longer pink. Remove chicken from pan to a small bowl. In the same pan add more olive oil if needed and add the chopped onion, tomatoes, spinach and 1 tbsp of the mediterranean spice mixture. Combine. Cook for 2 - 3 minutes.
Add fresh pasta to the pot of water when the water is boiling and cook for 3-5 minutes. Use regular pasta if you want and cook according to the package.
Add the cooked chicken, cream, roasted red peppers, feta and 1/4 cup of the pasta cooking water.
Cook for another couple of minutes.
When pasta is done drain, (do not rinse) and add it to the Chicken mixture and combine or put on a serving plate and pour sauce over top. Sprinkle with grated parmesan cheese and fresh basil pieces.

Garam Masala recipe:
Here are the ingredients and steps to make this recipe!
1 bunch Spinach, blanched and pureed to yield 1 cup
3 lbs bone in Chicken pieces
1 – 2 tbsps Mustard Oil
1 – 2 tbsps Regular Oil
1 cup finely chopped Onion
1 tbsp each Ginger & Garlic paste
1 tsp each Chilli powder, Turmeric, Cumin & Coriander powder
2 cups diced Tomatoes
Salt to taste
1 tsp each Garam Masala & Kasuri methi
Blanch the spinach in some hot water and drain and leave aside to cool
In a saute pan, heat up regular oil, together with the fragrant mustard oil
Add one cup of finely diced onions and saute
Allow this to caramelize then add 1 tbsp of ginger paste followed by 1 tbsp garlic
Stir and cook to remove the raw Ginger and Garlic taste
Add 1 tsp each Chilli powder, Turmeric, Cumin & Coriander powder
Mix well to allow the spices to warm up
Add 2 cups diced tomatoes & some salt
Cover and allow to cook till mushy and it forms a thick paste
Stir at intervals to prevent burning
Add the chicken and fold in to coat in the gravy
Puree the cooled Spinach
Cover and cook and stir at intervals for about 20 – 30 mins till the chicken nice and tender
Add one tsp of Garam masala and Kasuri methi or dried fenugreek
Add the spinach puree in and fold in
Let this simmer for a few more minutes and it’s ready to eat with rice or rotis

INGREDIENTS
6 bone in skin on chicken thighs
salt and pepper to taste
2 tsp paprika
2 tsp dried basil
2 tsp dried thyme
2 tsp dried rosemary
olive oil
2 Tbs butter
1 large onion, minced
5 huge cloves of garlic
2 Tbs flour
1 cup chicken broth
1/2 cup whole milk
1/2 cup heavy cream
1/4 cup grated parmesan cheese
2 little cubes of chicken bouillon
1/4 cup fresh basil, chopped
1/4 cup of fresh parsley chopped
Bake at 400F for 45 minutes or until chicken has internal temperature of 175 F
