How To make Spinach Fettucini with Ginger Chicken
Ingredients

shallot, chopped

ginger, fresh, grated

chives, fresh, for garnish
Directions:
Preheat oven to 350 degrees. Put all the marinade/dressing ingredients in a blender and mix thoroughly as low speed. Place the chicken in a shallow baking dish. Pour half of the mixture from the blender over the poultry, reserving the remainder. Cover and refrigerate the chicken for 20 minutes.
While the chicken is marinating, bring a large pot of water to a boil over high heat. Add the fettucini and cook for 8 to 12 minutes to desired doneness.
In the meantime, remove chicken from the refrigerator. Uncover the baking dish and transfer it to the oven. Bake for about 15 minutes until the meat is no longer pink and the juices run clear.
When the pasta is cooked, remove the pot from the heat. Drain the fettucini and return it to the pot. Stir in the chicken stock and keep the mixture warm over the lowest heat setting.
Pour the cooking juices from the chicken into a saute pan. Add the squash, bell pepper, leek, broccoli, and mushrooms. Saute for about 3 minutes, just until the vegetables begin to wilt.
Transfer the pasta to a warm serving bowl, along with the vegetables. Shred the chicken on top. Add the reserved dressing and toss. Garnish with snipped chives.
Serves 4.

INGREDIENTS :
Chicken breast fillet
Salt 1tsp
Black pepper 1tsp
Ginger paste 1tsp
Garlic paste 1tsp
Paprika powder 1tbsp
Butter 3tbsp
Spinach
Parmesan cheese 1/2cup
Cream 1/2cup
Chicken broth 1 cup
Lemon 1
herbs of your choice
For Chicken marination :
Add Chicken breast fillet ,Salt 1tsp,Black pepper 1tsp,Paprika powder 1tbsp,ginger and garlic paste 1tspn each and black pepper 1tspn in a mixing bowl
Leave it for 30mins
Method :
In a pan add Butter 2tbsp and the Marinated chicken and cook it
In an oven proof pan add 1tbsp butter with 2tsp garlic paste or you can add 2 crushed garlic cloves to it fry until fragrant
Add 2 handful of spinach ,simmer until spinach has wilted
Add juice of 1 lemon ,1 cup chicken stock ,1/2 cup cream ,parmesan cheese nd add some hebs to it
Stir it and bring it to boil
Once the mixture gets thickened add the cooked chicken breast fillets to the pan and bake it in oven for 400°F for 25mins
After 25mins its Ready to serve

Creamy Spinach & Mushroom Chicken is a step by step video showing how to make this delicious recipe in the instant pot. You will definitely want to make this if you like spinach, mushrooms, and chicken. I did add grape tomatoes too. If you don't like tomatoes you can definitely leave them out. Enjoy!
Recipe:
2 to 3 chicken breasts filleted
2 to 3 tbsp of grape seed oil
1/2 tbsp of butter
1/2 cup of gluten free flour (or regular flour) salt & pepper mixed in
1 cup of diced onions (1 small chopped onion)
1/2 tbsp of crushed garlic
8 oz of baby bella mushrooms sliced
8 oz of grape tomatoes
8 oz of baby spinach
1 cup of chicken broth
1/2 tsp of oregano
1/2 tsp of Italian seasoning
4 oz cream cheese at room temperature
1/2 cup of grated Parmesan cheese
1/3 cup of heavy cream
1.5 tbsp of gluten free cornstarch or regular cornstarch mixed well with 1.5 tbsp of water.
Instructions:
Coat chicken in flour mixture and set aside.
Turn instant pot on saute high or more. Add 3 tbsp of grape seed oil and allow it to heat up for a 3 minutes.
Add chicken breasts a few at the time and lightly brown them on both sides for 2 to 3 minutes per side. Repeat until all chicken has browned.
Remove chicken breasts and deglaze pot by adding 1/2 tbsp of butter and gently scrapping the bottom of the pan.
Add onions and garlic. Stir frequently for 2 minutes.
Add mushrooms and stir frequently for another 2 minutes.
Add the chicken broth and Italian seasoning and oregano. Stir.
Now add the chicken breasts back in. Place tomatoes on top of chicken breasts. (Do not stir)
Add the baby spinach. It will cook down.
Turn your instant pot off and then turn it on to manual or pressure cook high for 5 minutes. After the 5 minutes has counted down do a quick release.
Remove the chicken.
Turn the instant pot off and turn it back on saute mode.
Now add your cornstarch slurry and whisk well. Allow it to come to a bubble and cook for 1 to 2 minutes.
Stir in cream cheese until it is well combined.
Turn off your instant pot.
Add heavy cream and stir.
Now add your Parmesan cheese little by little and stir.
Put your chicken back in to sauce and serve.
You can serve it with mashed potatoes, or rice, or pasta.

Hi everyone,
In this video I'm going to prepare a curry with the limited vegetable supply available at home - spinach, tomatoes and some chicken hotdogs - and the resultant curry is Creamy Spinach with Chicken Hotdogs. This is an ideal accompaniment for rice, chappatis, pasta and even spaghetti.
The ingredients and procedure is given below:-
Ingredients:-
3 tablespoons Oil
2 Onions, finely chopped
3 Green chillies, finely sliced
1 teaspoon Ginger garlic paste
1/2 teaspoon Turmeric powder
2 teaspoons Red chilli powder
2 teaspoons Red chilli paste
4-6 Chicken hotdogs, finely sliced diagonally
4 Tomatoes, diced into small pieces
3 bunches of finely chopped blanched Spinach
Salt to taste
1/2 teaspoon Garam masala powder
1/4 cup Cooking cream
1/4 to 1/2 cup Water
Coriander leaves, finely chopped (for garnishing)
Procedure:-
1. Pour 3 tablespoons oil into a vessel and heat it.
2. When hot, drop in 2 finely chopped onions and 3 finely sliced green chillies.
3. Mix and let it cook until the onions start to change colour.
4. Add 1 teaspoon ginger garlic paste, 1/2 teaspoon turmeric powder, 2 teaspoons red chilli powder and 2 teaspoons red chilli paste.
5. Mix well and add 4-6 chicken hotdogs, sliced finely and diagonally.
6. Mix the chicken hotdogs in the masala and add 4 tomatoes, diced into small pieces.
7. Mix the contents and cook for about 2 minutes covering the vessel.
8. Add 3 bunches of finely chopped blanched spinach and mix well.
9. Add some salt and 1/2 teaspoon garam masala powder.
10. Mix and cook for about 5 minutes with the vessel covered.
11. Add 1/4 cup cooking cream and an equal amount of water.
12. Mix well, adding some more water if required, and cook covered for about 5 minutes.
13. Your creamy spinach with chicken hotdogs is now ready. Transfer the curry to a serving bowl and garnish with some fresh coriander leaves before serving with rice, chappatis, pasta or spaghetti.

Preparation Time 10 min
Cook Time 20 mins
Total Time 30 mins
Yield 8
Ingredients
Chicken 500 gm
Mushroom 200gm
Pasta 500 gm
Spinach 200gm
Single cream 284ml
Cheese 200gm
Onion 1
Ginger and garlic paste 1 tspn
Salt and pepper 1 and1/2 tspn
Directions
Boil water then add salt,oil and pasta.
Boil for 8 to 10mins.
Once it's done Rinse with cold water.
Add oil in a pot then add sliced onion. Stir for one minute or until its get golden brown. Then add garlic and ginger paste.
Add black pepper and mushrooms ( you can add chicken before adding mushrooms).
Add chicken and salt then stir
Cover and cook for 3mins.
Add spinach then stir.
Add single cream.Cook for few minutes then add boiled pasta.
Cover the lid and cook for few minutes.
Add cheese .Cook for another few minutes.
Remove from heat. Then set it for few minutes.
Ready to serve.Enjoy????
