How To make Spicy Potatoes
3 Baking potatoes, boiled
Whole in their peels, Cooled, peeled and diced x A squirt of Pam (optional) 3 tb Water
1 Medium-size onion, peeled
And minced 1 tb Grated fresh ginger
1/4 ts Cayenne pepper (or any
Ottening agent to taste) 3 tb Finely minced cilantro
1 ts Ground coriander
1 ts Garam masala (use allspice
If you don't have it) 1 ts Ground cumin
2 tb Amchoor or lemon juice
x Salt to taste This was dinner last night. It's adapted from the recipe for samosa filling in Madhur Jaffrey's World of the East Vegetarian Cooking (not a vlf cookbook, but many of the recipes are adaptable and the info on exotic spices and ingredients is very helpful). I wrapped this stuff in whole wheat tortillas to make a sort of multicultural burrito--pita bread might also work well. Give a large skillet a squirt of Pam, and briefly saute the onions. Add the ginger, cayenne, cilantro and water. Cover, lower heat and simmer gently. Add more water as the pan dries out and continue to simmer until you have what MFK Fisher calls "an odiferous mulch" (about five minutes, stirring occasionally). Add the other ingredients and turn everything gently with a spatula to mix as it continues to cook. Add more water if stuff is sticking. After another 3-4 minutes it will be ready to eat. This served two with leftovers, but there were a few other things for dinner as well. The original recipe called for a cup of defrosted frozen peas to be added with the ginger and cilantro, but I didn't have any. Milk - ½ of ¾ cup / to adjust

To Make Spicy Garlic Potato
Potato - 1 No. Large
Salt - 2 1/2 Tsp
Corn Flour - 1/4 Cup
Fried Coriander Leaves
Fried Garlic
Chilli Powder - 2 Tsp
Cumin Powder - 1 Tsp
Garam Masala - 1/2 Tsp
To Make Cheese Sauce
Milk - 1/4 Cup
Cheese Slice - 2 Nos
A Pinch Of Salt
A Pinch Of Pepper
Chilli Flakes
Italian Seasoning
Method:
1. Wash, peel the skin and cut the potatoes into even sized cubes. Place them in water.
2. Take a pot full of water, add salt, potatoes and boil for 15 mins.
3. Strain and let them cool down. Transfer them to a bowl, add corn flour and toss fully so that the potatoes are coated with the flour.
4. Heat a kadai with oil and drop the coated potatoes. Fry until they are golden brown. Transfer them to a wide bowl.
5. Then fry the coriander leaves, garlic separately and keep them aside.
6. Add chili powder, salt, cumin powder, garam masala powder, fried garlic, fried coriander and mix everything well. Keep it aside.
7. To a pan, add milk and cheese slices. Let it thicken.
8. Add salt, pepper, chilli flakes, Italian seasoning and mix well.
9. Lastly, add grated cheese and give it all quick mix.
10. Now take the fried potatoes into two different serving bowls.
11. Leave the potatoes as they are in one of them. Pour the cheese sauce on potatoes in another one.
12. Spicy Garlic Potato 2 ways is ready to be served.
13. Serve them hot with tomato ketchup by the side.

Ingredients:
-Cooking oil for frying
-Aloo (Potatoes) peeled & cubes ½ kg
-Olive oil 2 tbs
-Lehsan (Garlic) chopped 1 tbs
-Paprika powder 1 & ½ tsp
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Dhania powder (Coriander powder) ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Fresh parsley chopped 1 tbs
-Hara dhania (Fresh coriander) chopped 1 tbs
-Namak (Salt) ½ tsp or to taste
-Lemon juice 1 tbs
-Fresh parsley chopped
Directions:
-In wok,heat cooking oil and fry potatoes until golden brown & set aside.
-In frying pan,add olive oil,garlic and mix.
-Add paprika powder,red chili powder,coriander powder,cumin powder,fresh parsley,fresh coriander, salt and mix well for 1-2 minutes.
-Add lemon juice and mix well.
-Now add fried potatoes and give it a good mix.
-Garnish with fresh parsley & serve!

-Lemon juice dal ker ache tarhan mix ker lein.
-Ab fried aloo shamil karein aur ache tarhan mix karein.
-Fresh parsley sa garnish ker ka serve karein.
