Roasted Masala Gobhi or Whole Baked Spicy Cauliflower is an Indian version of the roasted cauliflower marinated in tandoori spices and roasted in the oven until golden brown and cooked. Roasted Masala Gobhi is a healthy option to Tandoori gobhi which is first fried and then baked in a Tandoor. It is spicy, crispy on top and the soft cauliflower has a creamy texture which tastes best when served with mint chutney or mint mayonnaise. Aloo Gobi | Oven Roasted Potato Cauliflower
Easy aloo gobi recipe that will give you amazingly flavorful bites of cauliflower and potatoes that are tender with crisp edges and still hold their shape. Roasted in the oven but tastes authentic and delicious. A no fuss recipe with minimal cooking effort. No soggy sad looking mush!

✅ OVEN ROASTED ALOO GOBI INGREDIENTS
3 to 4 tablespoons olive oil
½ tablespoon grated ginger
½ tablespoon grated garlic
1 teaspoon dried fenugreek leaves, kasuri methi
¾ teaspoon ground coriander
½ teaspoon garam masala
½ teaspoon chili powder, Kashmiri chili is milder
½ teaspoon cumin seeds
¼ teaspoon nigella seeds, optional
¼ teaspoon turmeric
1 teaspoon salt, adjust per taste
1 medium cauliflower, cut in 1½ florets, 5 cups
2 potatoes medium, cut in 1 by ¾ inch sticks, 2 cups
¾ cup grape tomatoes, cut in halves
½ cup sliced shallots, or red onion
1 green chili, sliced or chopped
2 tablespoons chopped cilantro
2 tablespoons lime juice

Ingredients required for making peppery cauliflower recipe - serves 4
* medium cauliflower cut into medium sized florets
* 1 large red onion
* 1 teaspoon salt or as per taste
* 1 teaspoon black peppercorns crushed coarsely
* 1/2 teaspoon kashmiri red chilli powder (adjust proportion according to your preference). You can also use paprika to avoid the chilli heat.
* 1 tablespoon thick tomato paste/tomato sauce or ketchup/tomato puree
* 1/2 teaspoon garam masala powder (optional)
* 1 teaspoon sugar (optional)
* 3 tablespoon oil or adjust proportion according to your preference

Cauliflower And Potato Curry With Green Peas - Aloo Gobhi Masala - Vegan Recipe
This delicious Indian Style potato and cauliflower recipe is known as aloo gobi. With some basic spices you can easily make this curry and soon it will become your family favorite.

Ingredients required for making aloo gobi masala recipe - Serves 6 to 7
* Cauliflower (Gobhi / Fulkopi) - 700 gm / 1.5 lb
* Potato (Aloo) - 550 gm / 1.2 lb / 2 to 3 large
* Onion - 140 gm/5 oz/ 1 cup finely chopped
* Ginger - 1 inch by 1 inch
* Garlic - 4 large. You need 1 tablespoon heaped grated ginger + garlic (together)
* whole green chili - 1 (optional)
* Crushed tomatoes (canned) - 3/4th cup. You can even puree two large tomatoes in your blender. All you need is 3/4th cup.
Alternatives to tomato - If you are not on a vegan diet you can use 4 tablespoons of yogurt. You can even grind some red capsicum to get that color and add lemon juice at the end of the dish to get that hint of sour flavor. You can even use 1 tablespoon of tamarind pulp.
* Frozen green peas - 1/3rd cup . Can even use fresh ones.
* Kashmiri red chili powder - 1 teaspoon. You can even use paprika or 1/2 teaspoon of cayenne pepper and 1/2 teaspoon of paprika or just 1/4th teaspoon cayenne pepper. Adjust the proportions according to your preference and liking.
* Turmeric powder (haldi) - 1/2 teaspoon
* Ground coriander seeds (dhania powder ) - 1 teaspoon
* Garam masala powder - 1/4 th teaspoon
* salt - as per taste
* Sugar - 1 teaspoon (totally optional)
* Coriander leaves (cilantro ) - as per taste
* Oil - 4 tablespoons
Serve this with rice or roti.
