Orange Nut Muffins
This quick and easy muffins have a wonderful orange flavor and are great with butter or jam. The recipe also gave me the opportunity to use flour from the Weisenberger Mill in Midway, Kentucky.
3 cups all-purpose flour
1 tsp salt
4 tsp baking powder
3/4 cup sugar
1 egg
1 1/2 cup milk
1 TBSP grated orange peel
1/2 cup chopped nuts
2 TBSP oil
1 tsp vanilla
1 tsp cinnamon
Pre-heat oven to 400 degrees.
Sift flour. Add baking soda, cinnamon, sugar and salt and sift again.
In a separate bowl combine milk, vanilla, egg and oil. Mix well.
Add wet ingredients to flour mixture and stir together until just combined. Fold in orange zest and nuts.
Either line muffin tin with paper liners or spray well with non-stick spray. Fill muffin cups with batter to 80 percent full.
Bake for 20-25 minutes or until tops are golden brown and muffins test done with a toothpick.
Remove from muffin tins and allow to cool on wire rack.
