How To make Spicy Rice & Nuts
3 tb Vegetable oil or ghee
1 c Diced celery
1 ts Asafetida
1 tb Ginger, grated
1/4 ts Chili seeds
1 ts Cumin seeds
1 ts Garam masala
3 c Long grain brown rice
4 1/2 c Water
1 tb Soy sauce
1/4 c Raisins
1/8 c Cashews, toasted
1/8 c Peanuts, toasted
1/8 c Sliced almonds, toasted
1/8 c Sesame seeds, toasted
Saute first 3 ingredients together till celery and/or onion turns translucent. Add the next 4 ingredients and fry till spices begin to turn brown and you can smell them in the air. Add the rice and stir-fry till it begins to turn golden brown. Then add the next 3 ingredients, mix well with spoon and bring to a boil. Cover and turn heat down to medium-low so it maintains a gentle roiling boil for 10 to 15 minutes. Turn down and simmer for 15 to 20 minutes. Garnish with nuts and seeds before serving. “Roz Bel Khalta”- Egyptian rice with nuts
“Roz bel khalta”is rice made with roasted nuts and sometimes chicken or turkey giblets. People do “Roz bel Khalta” in many ways, but my favorite is the one made with caramelized onions…. The onions add a sweet note and amazing flavor to the rice and I add some of it to the nut mixture as. Make sure to use home quality stock for cooking. You can serve this rice with roast turkey, kabobs, roast beef and kofta.
Ingredients:
5 tablespoon ghee
2 medium onions
1 tablespoon cinnamon
1 cinnamon stick
3 and 1/2 cup chicken stock or Turkey stock
Salt to taste
2.5 cups Egyptian rice (short grain or can be replaced with medium grain rice)
For the nut mixture:
1 tablespoon ghee
1/4 cup roasted or fried almonds
1/4 cup roasted hazelnuts
1/4 cup golden raisins
4 tablespoon pine nuts
Tips:
The amount of broth can vary depending on the type of rice, read preparation instructions on the rice package & adjust the amount of stock as required.

Basmati Rice - 2 cups (washed, soaked 1/2 hour and half boiled & drained)
Ghee – 3 tbsp
Cumin Seed – 1 tsp
Fennel Seed – 1 tbsp
Cassia Bark – 3 inch stick
Black Pepper – 1 tbsp
Green Cardamom – 7
Cloves – 5
Star Anise – 2
Bay Leaves – 3
Onion – 1 large (finely sliced)
Sugar (or Jaggery) – 1 tsp
Cashew Nuts – 100 g
Green Raisins – 100g
Basmati Rice – 2 cups (par boiled)
Salt – to taste
Chilli powder – 1 tsp
Turmeric – 1 tsp
