0:27 - Weigh the dry ingredients, butter and milk

Fruit Scones
makes 8 to 10 scones
500g x Self-raising Flour
75g x Caster Sugar
125g x Butter
1tsp x Baking Powder
2 x Eggs (+ 1 for glazing)
90g x Dried Fruit
Milk to Bind
Chantilly Cream
300ml x Double, Heavy or Whipping Cream
30g x Icing Sugar
1 tsp x Vanilla Extract
Strawberry Jam and Fresh Strawberries
1. Place the flour, baking powder, sugar, and butter into a mixing bowl. Rub between your fingers and thumbs until it resembles breadcrumbs.
2. Chop the dried fruit as small as you can and add to the flour mixture. Mix and make a well in the centre.
3. Crack in two eggs and add a splash of milk. Mix with a fork until it comes together to form a dough. You may need to keep adding small amounts of milk until you get a firm dough. If the mix becomes too wet just add more flour until it feels firm to the touch.
4. At this stage, preheat the oven to 170°C and lightly flour a workbench. Turn out the dough and press together with your hands to form a round shape. Roll out using a rolling pin to 1.5 inches in thickness.
5. Grab a cookie or sone cutter and being to cut out your scones. Press down firmly without twisting the cutter. Place the scones onto a baking sheet lined with parchment paper.
6. Glaze the tops of the scones with a beaten egg. Place in the preheated oven and bake for 18 to 20 minutes. Place onto a cooling rack to cool.
7. For the Chantilly cream place the cream, icing sugar, and vanilla extract into a mixing bowl and whip using a whisk until it holds its shape.
8. Once cool break or cut the scones in half and fill with a good dollop of chantilly cream and a spoonful of strawberry jam. Finish with some slices of fresh strawberries.

How to make TRADITIONAL BRITISH fruit Scones
How to make traditional British fruit scones.
Nothing says 'British summer' more than a traditional afternoon tea where the star of the show is always the scones.
Watch this video to learn how to make these delicious fruit scones that are so fluffy, crumbly and moreish. To finish them off I filled them with clotted cream and strawberry jam; the traditional filling and absolute bliss.
This is a quick, simple, easy recipe that children will love to make and the whole family will love to eat.
Ingredients you'll need-
- 500g Plain flour (plus a little extra for dusting)
- 80g Unsalted butter
- 150g Dried fruit - eg raisons or sultans
- 25g Baking powder
- 80g Caster sugar
- 1 tsp Vanilla extract (aka a splish)
- 3 Eggs
- 250ml Full fat milk (may not need to add all of this).

How to Make Fruit Scones - back to basics
A Fruit Scone recipe for you lovely lot. Another basic recipe that you can make if you find yourself spending a lot more time indoors. Scones are great for breakfast or for snacks, plus they are wonderfully cheap AND quick to make! I hope you're all staying safe and healthy.
BE A MAVERICK: if you don’t like fruit, feel free to swap it out for nuts or chocolate chips instead!

~ * INGREDIENTS * ~
225g (1 ¾ cups) self-raising flour
75g (5 tbsp) cold butter, cut into small cubes
75g (small handful) raisins, sultanas, dates, apricots or mixed peel
1 egg white (keep the yolk for glazing!)
3 tbsp caster sugar or granulated sugar
½ tsp baking powder
Pinch of salt
2 tbsp milk (plus extra for glazing)
~ * INSTRUCTIONS * ~
1) First, preheat your oven – 220 C / 200 C fan / 425 F / gas mark 7 – and line a flat baking tray(s) with some greaseproof paper.
2) In a large bowl, rub the butter into the flour until there are no little lumps remaining.
3) Add the raisins, egg white, sugar, baking powder, salt and milk and use a table knife to stir the mixture into a rough dough.
4) You may need to add more milk at this point to help bring the dough together. It should be firm but not too sticky or too dry to work with.
5) Sprinkle a little flour onto a work surface and gently flatten the dough with your hands into a circle at least 2 inches thick. Try to work the dough AS LITTLE as possible, otherwise you may end up with flat, tough fruit scones!
6) Use a round or fluted cutter (whichever size you like) to cut out 6-12 scones from the dough. Try not to twist the cutter (this can cause them to rise poorly) and re-rolling and flattening the dough where necessary.
7) Once you have formed all of the dough into scones, place them on the prepared baking tray(s).
8) Mix together the reserved egg yolk with a splash of milk, and brush lightly over the surface of each scone. This will help give them a nice colour once baked.
9) Bake the tray(s) of scones for 13-15 minutes until risen, golden, and firm underneath.
10) Allow the scones to cool slightly before slicing in half and spreading generously with whatever you like.
11) Enjoy!
