Mmmm, I was craving Sangria! It's been forever since I've made myself this delicious Red Sangria. But it never fails to satisfy my tastebuds! My two secret ingredients really help kick it up a notch- so don't forget those! I ended up adding 2 extra shots of the Peach Infused Vodka (6 total) because we were feeling crazy lol! Pur Fait Ypocras Treys unces de canell & iii unces de gyngenuer, spykenard de spayn le pays dun denerer, garyngale, clowes gylofre, poeurer long, noiez mugadez, maziozame, cardomonij de chescun i quart’ douce grayne & de paradys, flour de queynel, de chescun dm unce de toutes soit fait powdour, &c.
To Make Hippocras: Three ounces of cinnamon and three ounces of ginger, spikenard of Spain the size of a denier (or small french coin). Galangal, cloves, long pepper, nutmeg, marjoram, cardamom, a quarter ounce. 1/10th ounce Grains of paradise and powdered cinnamon, etc.
MODERN RECIPE
INGREDIENTS
- 2 Bottles Red or White Wine
- 1 ounce (28g) of cinnamon sticks
- 1 ounce (28g) of fresh ginger slices
- ¼ Teaspoon spikenard root
- 1 Teaspoon galangal
- 1 Teaspoon cloves
- 1 Teaspoon Long pepper
- 1 Teaspoon Nutmeg
- 1 Teaspoon Marjoram
- 1 Teaspoon Cardamom
- ½ Teaspoon Grains of Paradise
- ½ Teaspoon Ground Cinnamon
METHOD
1. Pour the wine into a large pitcher. Grind your spices and mix them into the wine. Cover the container and let sit for 1 to 2 days.
2. Pour the wine into another pitcher through a coffee filter or jelly bag to remove any spices*. Serve wine warm, cold, or at room temperature.
*The remaining spices can be used in stews, sauces, or to make soap.

Pears are an underrated fruit for sure! They're one of my favourite fruits to make desserts with because they're super versatile. These red wine poached pears are exquisite with tons of flavours going into the poaching liquid. I serve them with whipped cream with mascarpone and toasted almonds.

Glögg - a mulled wine recipe
In today's video, we're making glögg! This is a Scandinavian mulled wine recipe that is typically made for large holiday parties. This year I'm not attending any large parties, so I've put together my own recipe that will serve 2-4 people. If you're keeping it low-key this holiday season, give this one a try. Then next year you can easily scale up all the ingredients to serve the masses! For this recipe I'm using cognac, which is common in other mulled wines. However, if you wanted to change it up, feel free to use whiskey, rum, or even aquavit (if you wanted to be traditional to Scandinavia). This drink is best enjoyed on a cold evening with ginger snap cookies. Cheers!

1 bottle (750 ml) Louis Jadot Beaujolais-Villages (any red wine)
12 oz. (360 ml) Fonseca Bin #27 Ruby Port
6 oz. (180 ml) Maison Rouge V.S.O.P. Cognac
1/2 cup (118 ml) Demerara sugar
