How to Make a Flavour Essence for Soda Syrup and Cocktails
Patreon:
Some of the best sodas, think Pepsi, Coke and rootbeer, are made using the essential oils from fruits and spices as a flavouring. Using all-natural essential oil is a perfect way to capture the essence without the bitterness and astringency from extraction methods. However, oil and water do not mix and when most people try to make their own sodsa this way they end up with a cloudy syrup. Though that doesn't affect the taste, it can look less than appealing.
The method makes a clear flavour syrup made from essential oils and it is the same technique pharmacists used at soda fountains in the late 1800s and early 1900s. It was a point of pride to make clear syrups. This method is simple, only requires a few ingredients and a bit of patience.
If you are unsure what essential oils are considered safe, please refer to the FDA's Generally Recognized As Safe (GRAS) database.

How to Make an Herbal Flavour Extract for Bitters and Soda
Patreon:
Equipment List:
Making an extract from herbs and spices is a great way to create unique flavours for bitters and soda. Though essences capture the aroma compounds, extracts capture the flavour compounds that provide bitterness, astringency and spiciness which helps to rounds out drinks.
Using a percolator is the faster way to make an extract, taking 24 to 48 hours and creates a concentrate that can be diluted to make tinctures, elixirs, tonics and syrups.

Easy Beginner Hard Cider Recipe
Hard Cider Process for Beginners - Hard Cider from Apple Juice. A decent hard apple cider is usually a starting point for homebrewers. It's simple, cheap, tastes pretty good and doesn't have to take a long time to make. Of course, time heals all brews, and letting it age a bit will improve it, but, I digress. In this video we show you how to make a basic hard cider, using a process for beginners and take you through the making of it, to racking, and on to bottling and tasting our hard apple cider.
We made a page all about what GEAR you need for Brewing, have a look:

-------------------------------------------------------------------------------
1-gallon fresh apple cider
2 medium oranges (one for garnishing (optional)
1 (1 1/2-inch) piece fresh ginger
5 (3-inch) cinnamon sticks (more for garnishing (optional)
1 tablespoon whole cloves
1 1/2 teaspoons of Chinese Five-Spice powder, or 5-star anise pods
2 cups dark, spiced rum
INSTRUCTIONS
Pour the cider or juice into a 5-quart or larger slow cooker, or a Dutch oven. Cut the oranges into 1/4-inch-thick rounds. Cut the ginger into 1/4-inch-thick slices. Add both to the slow cooker.
Add the cinnamon sticks, Chinese Five-Spice powder, and whole cloves. To make it easier to serve, place the cloves in a tea ball first, or place in a double layer of cheesecloth or coffee filter, gather it up into a sachet, and tie closed with kitchen twine. OR, stud an apple with the whole cloves.
Cover and cook until the flavors meld, about 4 hours on LOW.
Add the rum and stir to combine. Let sit for 10 minutes for the flavors to meld. Keep warm and serve in mugs garnished with orange slices and cinnamon sticks.
RECIPE NOTES
Apple cider: Buy fresh apple cider or unfiltered apple juice for the best flavor. Do not use sparkling cider, spiced cider, hard cider, or clear apple juice.
Rum: sub in bourbon or brandy to your preference. To make it a family friendly drink, leave out the rum so that children can enjoy it as well. Offer the rum on the side for the adults to add to their own mugs at serving.
Storage: Leftover cider can be stored in the refrigerator for up to 3 days.
