How To make Southwestern Wraps
1 cup cooked rice
3/4 cup salsa
15 oz. can black beans, drained
rinsed
11 oz. can Mexicorn, drained :

8 ounces deli turkey OR
chicken 1/2" cubes 8 ounces Jalapeno cheese :
1/2" cubes
6 flour tortillas (10 inch) -- warmed
*NOTE: Mexicorn is canned corn with red and green peppers. 1. In large bowl, stir together all ingredients except tortillas. 2. Place about 1 cup filling in center of each warm tortilla. Fold two opposite edges of tortilla toward center over filling. Roll up open end of tortillas toward opposite edge. Place, seam-side down, on microwave-safe plate. 3. Microwave two sandwiches on high, turning or rearranging after half the time, until heated through (1 to 2 minutes). Repeat with remaining sandwiches. Serve with salsa, if desired. Meal Prepping is a great way to help you lose weight, save money and time. Wraps are one of my go to foods especially when I don't have much time in in the kitchen. You can cook your protein (or make it vegetarian) ahead of time and have it ready on standby to make a great wrap any time by just adding some fresh ingredients to a Tortilla. In this video I show you how to make a healthy Southwestern Chicken Wrap. This was really easy and it has a lot of great flavor combinations. You won't have to sacrifice your budget or your waist line to enjoy this meal on go. I hope you enjoy my meal prepping and meal prep recipes. Don't forget to Subscribe and Share. :)
Meal 1: Southwestern Chicken Wraps
Ingredients:
7 Chicken Breast
2 cups of Frozen Corn
1 Medium Red Pepper
1 Medium Onions
2 Roma Tomatoes
4 Green Onions
1/2 Cup of chopped Cilantro
1 Can of Black Beans
1 Jalapeño Chopped
3 Cloves of Garlic
1 Avocado thinly sliced
4 Cups of Spinach
3 Limes
1 Tbsp Chipotle Chili Powder
1 Tbsp Cumin
1 Tsp Paprika
1/2 Tsp Onion Powder
1/2 Tsp Salt
1 Tsp Pepper
Olive Oil/ Grape Seed Oil
Cilantro Avocado Yogurt Dressing
Laughing Cow Cheese (optional)
Directions:
1. Cut chicken breast thinly into strips about 1/2 inch thick
2. Mix seasonings in a bowl (and pour over chicken) and mix throughly to ensure all chicken is evenly coated set aside and prepare other ingredients
3. Dice up onion, red bell pepper, a jalapeño, garlic and tomatoes (be sure to remove seeds) and scallions
4. Preheat pan on medium high heat - add 1 and 1/2 tablespoons of olive oil to pan - add in garlic and jalapeños and cook 30 seconds
5. Add chicken to pan and sauté 7-8 minutes
6. Remove chicken from pan
7. Add another 1/2 tablespoon oil to same pan (do not clean pan)
8. Then add corn, peppers and onions to pan and sauté for 2 minutes.
9. Add tomatoes and black beans and cook for another 30 seconds. Remove from heat and set aside to cool.
10. Thinly slice an avocado and squeeze 2 limes (or lemons) over the avocado to help from turning brown
Assemble the wrap:
* Take wrap or tortilla and lay flat - take 1/2 cube of laughing cow
cheese and spread on wrap
* Add 1/4 cup of spinach
* 1 Tablespoon cilantro avocado yogurt dressing
* A couple slices of avocado
* Add 2 ounces of chicken
* Add corn and black bean salsa
* Top with scallions and diced cilantro
* Roll wrap and Serve with fresh lime on the side
