Sourdough Skillet Cornbread | Bluebonnet Bend Homestead
This is the best recipe I have followed for cornbread. The use of sourdough discard creates a wonderful texture and a unique flavor. The recipe that I use for the cornbread mix is one that I found on Pinterest several years ago and I do not know where it originated.
Cornbread Mix: 1 1/2 c flour 1 1/2 c corn meal 1/2 c sugar 2 Tbsp baking powder 1/2 tsp baking soda 1/2 tsp salt
Sourdough Cornbread: 1 1/2 c cornbread mix 2 eggs 1/2 c melted or softened butter 1 c sourdough starter discard (in my video I added a splash of milk because I was short a full cup of discard)
Bake at 375*F for 25-30 min in either a cast iron skillet (best) or a 9x9 pan.
This recipe can be replicated without the use of sourdough starter by adding an additional cup of the cornbread mix and 1 cup of buttermilk (best), heavy cream or milk.

Ingredients: 1 cup sourdough starter 1/3 cup vegetable oil 1 egg 1/4 teaspoon soda (baking soda) 1/4 teaspoon salt 1/2 cup all purpose flour (self rising flour is okay as well) 1 cup cornmeal (white or yellow)
Mix the starter, oil and egg. Add rest of ingredients and mix until blended well. Pour into an 8 inch square pan. Bake in preheated 350F oven for 25 to 30 minutes.
