Hello Friends! This is such a special recipe! This cake is rich, fluffy, light, and so full of dark chocolate flavor. Everyone who has tried it says it feels light in their stomach, and has the best flavor of any chocolate cake they have ever had. I know your family will love this recipe as much as mine! This is a cake frequently requested on birthdays!

Ingredients
1 C Fed Sourdough Starter
1 C Flour
1 C Milk
1 1/2 C Sugar
1 tsp Salt
1 1/2 tsp Baking Soda
1 C Oil (coconut, avocado, vegetable, whatever you prefer)
2 tsp Vanilla
3/4 C Coco Powder
2 Eggs (mix in 1 at a time with an electric beater)
Instructions
1. In a large bowl, mix starter, flour and milk together until they are thoroughly combined. Cover and allow to sit on the counter for at least 8 hours.
2. In a separate large bowl, mix sugar, salt and soda together until combined. Add sugar and combine. Then add oil and mix until combined. Add vanilla and mix. Add cocoa and mix. Then, using an electric handheld beater, beat in one egg at a time. Make sure to beat well until it's a smooth texture.
3. Stir the chocolate mixture into your sourdough mixture, and using a hand mixer beat it until it's well combined.
4. Butter a 9x13 pan thoroughly, and bake for 30-40 minutes at 350 degrees, until a toothpick inserted in the middle comes out clean.
Chocolate Frosting
Ingredients
1/2 C Butter
4 tbsp Cocoa Powder
6 tbsp Milk
1 tsp Vanilla
Powdered sugar to desired consistency
Instructions
1. In a medium sauce pan, add butter and melt on medium heat. Then add cocoa powder and milk, and bring the mixture to a boil.
2. Turn off the heat and add vanilla and powdered sugar to desired consistency. Mix until the frosting is smooth and well incorporated. Pour over cake and enjoy!

Here is the recipe:
Ingredients:
1 Cup sourdough starter
1 cup whole milk
2 cups all purpose flour
1 1/2 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 tsp salt
1 1/2 tsp baking soda
3/4 cup natural cocoa powder (not dutched)
2 tsp espresso powder
2 large eggs
Method:
In a large bowl, combine the starter, milk and flour.Cover and let rest for 2-3 hours, it might bubble and expand a little.
heat oven to 350 and lightly grease a 9 x 13 pan or two 9 pans. If doing two 9 pans, dust with flour and place parchment circles in the bottom.
In a stand mixer, beat together the sugar, oil, vanilla, salt, baking soda, cocoa powder, and espresso powder. The mixture might be grainy.
Slowly add the starter mixture to the chocolate mixture, stirring till smooth. It will take a while to smooth out.
Once smooth, pout it into the cake pan/pans.
Bake the cake for 30-40 minutes, until it springs back when touched and until a toothpick inserted comes out clean.
Remove from the oven and allow to cool on a rack.
Frosting:
Ingredients:
2 ounces unsweetened chocolate melted and cooled
1 1/2 cups powdered sugar
1 stick butter, room temp
pinch of fine sea salt
1 TBS cream
1/2 tsp vanilla exctract
Method:
Place all ingredients in a food processor and process till smooth and fluffy. If you do not have a processor, use a hand mixer. Spread on your cake.

Sourdough Chocolate Cake
Have sourdough, want cake? This easy chocolate cake recipe lets you mix up your baking a little bit, but lets you keep up with the sourdough trends. Recipe below.
Note that I put many measurements in metrics, but some, notably the spices, I leave as teaspoons. The reason is that measuring such small amounts by weight can be troublesome on kitchen scales and the exact amount isn't as important as the ratios. If you don't have measuring spoons, just use a spoon from your silverware drawer and eyeball it. It'll all turn out alright.
Salt should be measured by weight because the form it takes can vary so much that measuring by volume can be quite tricky.
Recipe (adapted from Sourdough Jack's Cookery):
Creaming
* 113g Butter
* 200g Sugar
* 2 Eggs
Wet
* 250g Thick Sourdough
* 227g Evaporated Milk
* 1tsp Vanilla Extract
85g Dark Chocolate
Dry
* 250g Plain Flour
* 1 1/2 tsp Baking Soda
* 1tsp Cinnamon
* 3g Salt
Sift the Dry ingredients. Measure and combine the Wet ingredients. Melt the Chocolate.
Cream the butter and sugar until lighter and fluffy. Beat in the eggs one at a time. Add the Wet ingredients and continue to mix until well combined. Mix in the melted chocolate.
Add the sifted Dry ingredients into the wet ingredients in small batches and mix until just combined.
Grease and flour a cake pan that is at least 20x20cm. 25x25cm would probably be better (although I haven't tried). Pour in the batter and even out the batter in the pan.
Bake at 175C for 40-50 minutes. Test doneness using a toothpick by sticking it into the center. If it comes out clean the cake is done.
When the cake is done, remove it from the oven and set to cool for 10 minutes. Then turn out onto a wire rack to continue cooling for at least another 10 minutes before dusting with confectioners sugar.

The Best Chocolate Cake and it's a Sourdough Chocolate cake! There is nothing sour about this cake, it is moist and delicious. This cake is easy to make and feeds 12-15 people.
Recipe:
1 Cup of sourdough starter (Watch video recipe:
2 Cups of all-purpose flour
1 Cup of milk
*Mix and set dough to ferment for 2-3 hrs.*
1 1/2 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon salt
1 1/2 teaspoons baking soda
3/4 cup natural cocoa powder (not Dutch process)
1 teaspoon espresso powder, optional
2 large eggs
*In a bowl, beat together the sugar, oil, vanilla, salt, baking soda, cocoa and espresso powder. The mixture will be a bit grainy.
*Add the eggs one at a time, beating well after each addition.
*Combine the chocolate mixture with the starter-flour-milk mixture, stirring till smooth.
*Pour the batter into the prepared pan.
*Bake the cake for 30 to 40 minutes, until a toothpick inserted into the center comes out clean.
*Remove the cake from the oven, and set it on a rack to cool while you make the ganache.
Ganache
1 1/2 Cups of Semi-sweet chocolate chips
2 Tbs of heavy cream or half and half
2 Tbs. of butter
*Melt all ingredients together over low-medium heat.
*Pour over Cake and allow to set 5-10 in the fridge or 1 hr. on the counter.
