How To make Sourdough Rolled Chocolate Cookies
2 c Flour
1/2 c Sourdough starter
1/2 ts Salt
1/2 c Shortening
3/4 c Sugar
1 Egg
2 tb Rum
1 ts Vanilla
2 oz Unsweetened chocolate
Melted and cooled 1 c Uncooked quick oatmeal
Recipe by: Martha Sparks Sift together the flour and salt in a bowl. Add the softened shortening, sugar, egg, rum vanilla and sourdough. Add the melted chocolate. Beat until smooth. Add the oats, beat well. Chill for about 1 hour in refrigerator. Roll on lightly floured board to 1/8 inch thick. Cut with cookie cutter. Place on ungreased cookie sheet. Bake in preheated over 350 for 10 to 12 minutes.

Discard Crackers:
1 cup starter
1 cup flour
4 T Butter
Seasonings of choice
Mix until a dough is formed and sit in fridge 4-24 hours.
Bake at 350 for 15-20 min. Watch closely do they don’t burn

Sourdough Peach Skillet:
Fruit filling of choice- I used peaches
¼ cup cream or milk
1 T Flour
1 tsp cinnamon
1 tsp salt
Skillet Tipping
1 cup or more discard
1 t baking powder
1 t baking soda
¼ cup coconut oil
3-4 T Butter
1 egg
Bake at 350 until browned on top, around 25-30 min

6 eggs (or more)
1 cup sourdough discard
3 T Butter or cocnut oil
1 tsp salt
¼-1/2 cup milk

Sourdough Dutch Baby:
6-8 Eggs
1-2 cups discard
1/3 cup milk
1 t salt
1 t vanilla
2 T maple syrup
6 T Butter – melted in cast iron skillet
Bake at 350 for 15-20 min or until puffed up

Sourdough Chocolate Chip Cookies:
Original recipe:
8 T Butter (113 g)
1/2 cup brown sugar (100 g)
1/2 cup pure cane sugar (100g)
1 cup chocolate chips
3/4 cup all purpose flour (95g)
1 cup + 1 t bread flour (125 g)
1 t baking soda
1 t baking powder
1 t salt
1 egg
1/2 cup starter discard (125g)
1 t vanilla
Bake at 375 for 12-14 min

Sourdough Almond Butter Chocolate Chip Cookies

Well, I started with a recipe from traditionalcookingschool.com. I was hopeful that the recipe would be good but wondered about the lack of flour. I ended up adding flour and chocolate chips. Here is their recipe and I will put mine below.
2/3 cup sourdough discard
2/3 cup flour (I used freshly milled Kamut)
1 cup brown sugar
2 cups almond butter
1/2 tsp baking soda
1/2 tsp salt
2 tsp vanilla
2 eggs
2/3 cup chocolate chips (I used Lily's Dark Chocolate)
Preheat oven 350 degrees.
Mix all ingredients except chocolate chips.
Mix well.
Fold in chocolate chips.
Scoop cookie dough on baking sheet.
Bake 13 to 15 minutes.
Allow to cool for 10 minutes on pan then, move to cooling rack for 20 minutes.
