How To make Sourdough Chocolate Cake
1/2 c Sourdough starter
1 1/2 c All purpose flour
2 c Sugar
3/4 c Powdered cocoa (not instant)
2 ts Baking powder
2 ts Baking soda
1 c Milk
1/2 c Vegetable oil
3/4 c Cold coffee
1 ts Vanilla
Few people bake cakes from scratch anymore unless they can produce something that's not possible with a mix. This sourdough chocolate cake falls in that category. It's got a fudge-like quality you can't get any way except with sourdough and since it's all mixed in one bowl, it's almost as easy as a boxed cake. Put the starter in a large bowl, cover loosely and allow to stand at room temperature until active and bubbling -- at least one hour. Then add the rest of the ingredients, in the order given, beating well after each addition. It is not necessary to sift or premix any of the ingredients as long as you are careful to get the baking powder and soda evenly mixed. Grease and flour two 9-inch round cake pans, pour in the batter, which will be thin, and bake in a preheated 350?. oven for about 30 minutes, or until the layers test done when poked with a toothpick. The cake will have pulled away from the sides of the pan. Allow to cool about 10 minutes before removing from pans, then finish cooling the layers on wire racks. This Chocolate cake is Spectacular!!!!!!!
1 cup (227g) milk (whole milk or 2% preferred) or evaporated milk
2 cups (241g) King Arthur Unbleached All-Purpose Flour
1 cup sourdough starter (discard or fed)
1 1/2 cups (298g) granulated sugar
1 cup (198g) vegetable oil
3 teaspoons vanilla extract
1 teaspoon salt
1 1/2 teaspoons baking soda
3/4 cup (64g) natural unsweetened cocoa powder (not Dutch process)
1 teaspoon espresso powder, optional
2 large eggs
Preheat oven to 350 degrees
Combine milk, flour, and starter. Let rest 2 - 3 hours.
While dough is resting. Stir together sugar, oil, vanilla, salt, baking soda, cocoa powder, and instant espresso. Once mixed, add eggs one at a time until incorporated.
After the 2 -3 hours combine the flour mixture with the chocolate mixture. This can take awhile. I did it by hand the first time and did not mix it enough. I had white lumps in my cake. It was still good but didn't look great. The second time I used my mixer and it worked much better.
Pour batter into a 9 x 13 greased pan. Bake 30 - 50 minutes. Sometimes my cakes take longer. Not sure if it is the humid climate or what. Make sure your cake springs in the center and when tested with a toothpick, it should come out clean.
Frosting
2 cups powdered sugar
1/4 cup unsweetened cocoa powder
1 t vanilla
8 oz cream cheese softened
4 T butter softened
Combine all above frosting ingredients and pour over cooled cake.

Here is the recipe:
Ingredients:
1 Cup sourdough starter
1 cup whole milk
2 cups all purpose flour
1 1/2 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 tsp salt
1 1/2 tsp baking soda
3/4 cup natural cocoa powder (not dutched)
2 tsp espresso powder
2 large eggs
Method:
In a large bowl, combine the starter, milk and flour.Cover and let rest for 2-3 hours, it might bubble and expand a little.
heat oven to 350 and lightly grease a 9 x 13 pan or two 9 pans. If doing two 9 pans, dust with flour and place parchment circles in the bottom.
In a stand mixer, beat together the sugar, oil, vanilla, salt, baking soda, cocoa powder, and espresso powder. The mixture might be grainy.
Slowly add the starter mixture to the chocolate mixture, stirring till smooth. It will take a while to smooth out.
Once smooth, pout it into the cake pan/pans.
Bake the cake for 30-40 minutes, until it springs back when touched and until a toothpick inserted comes out clean.
Remove from the oven and allow to cool on a rack.
Frosting:
Ingredients:
2 ounces unsweetened chocolate melted and cooled
1 1/2 cups powdered sugar
1 stick butter, room temp
pinch of fine sea salt
1 TBS cream
1/2 tsp vanilla exctract
Method:
Place all ingredients in a food processor and process till smooth and fluffy. If you do not have a processor, use a hand mixer. Spread on your cake.

You’ve been asking for it, so here is one of a series of recipes I’ll be testing out that use sourdough starter discard. I was very impressed with how easy this recipe was and how well it turned out! I’ll be adding this one to my top tier chocolate cake recipes!
