How To Make Perfect Meatloaf
Chop up 1 larger size onion and 1/4 green pepper into small pieces. Place a pan over high heat and add 1/4 stick of butter, the chopped onions and green peppers and 1 tsp of minced garlic
Fry for approximately 7-10 minutes
FOR THE SAUCE: Get a bowl, combine 3/4 cups BBQ sauce and 6 tbs ketchup and stir in well
Get a big bowl and add 1-1/2 or 2 pounds of ground beef to the bowl.
Season with 2 tbs of Worcestershire Sauce, 2 tbs of Ketchup, 1 pack of Lipton Onion Soup mix, 1 tsp of Garlic powder, 1 tsp of celery salt, 1 tsp of pepper, and 1/2 tsp of thyme
Add the fried chopped green peppers and onions, 4 tbs of drained diced tomatoes, 2 eggs, 1/2 cup of milk, 3/4 cup of breadcrumbs, and blend well
Place in baking pan and shape meat into a meatloaf shape
Add 1/4-1/2 cup of beef broth to the pan of meatloaf and coat the top with the bbq sauce/ketchup mixture
Bake on 350 for 1 hour and 15-20 minutes

The Most Amazing Meatloaf Recipe
Ingredients
2.5 lbs of ground chuck
1 Tbsp of vegetable Oil
1 Onion, finely diced
3 cloves of Garlic, minced
1 stalk celery, grated
1 large carrot, grated
4 slices of Italian bread
½ cup of Milk
¼ cup of Chopped Parsley
1 cup of Parmiggiano Reggiano
2 Eggs
1 tbsp Worcestershire Sauce
Salt and Pepper, to taste
For the Glaze:
3/4 cup of Ketchup
2 Tbsp of Tomato Paste
¼ cup of Brown Sugar
1 tsp of Dried Mustard
1 tsp of Paprika
1 tsp of Granulated Garlic
1 tsp of Granulated Onion
Directions
Preheat the oven to 350 degrees.
Prepare a small rimmed baking sheet with tin foil and an even layer of nonstick spray and prepare a 9-inch loaf pan with a light coating of nonstick spray.
Meanwhile, begin heating the oil in a large skillet over medium heat.
Add the onion with a pinch of salt and cook, stirring periodically, for 5 - 7 minutes or until the onions are translucent.
Add the carrots and celery to the pan, continue cooking the vegetables for 3 - 4 minutes.
Add the garlic and cook for an additional 60 seconds. Allow the vegetables to cool for 15 minutes.
In a large bowl, put the pieces of bread and pour the milk over them, let them sit for a few minutes or until the bread soaks up all the milk.
Combine the milk-soaked bread, cooked onion, celery, carrot and garlic, parsley, Parmigiano, Worcestershire sauce, eggs, salt, and pepper. Mix until everything is well combined. Add the ground meat and Gently fold the ingredients together with your hands. Try to avoid squeezing the meat as much as possible while still achieving a homogenous mixture.
Press the meatloaf mixture into the prepared loaf pan. Flip the meatloaf out onto the foil-lined baking sheet.
In a small bowl, mix together all the ingredients for the glaze. Smear half of it evenly over the top and reserve the rest.
Bake the meatloaf for 50 minutes, then smear the rest of the sauce on top and put it back in the oven to bake for another 5 to 10 minutes. or
Continue cooking until the internal temperature reaches 155 °F
You may change the setting of your oven to broil during the last 5 minutes to caramelize the top of the glaze.

CLASSIC MEATLOAF
Preheat oven to 375 degrees F.
2 LBS. ground chuck beef
1/2 cup onions, finely chopped
1 large shallot, finely chopped
1/2 cup oatmeal
1/2 cup ketchup
1 egg
2 Tablespoons Worcestershire sauce
2 teaspoons kosher salt
1 teaspoon thyme
1/2 teaspoon fresh cracked pepper
TOPPING
!/2 cup ketchup
2 Tablespoons brown sugar
1. In a large mixing bowl add ground chuck, onions, shallots, oatmeal, ketchup, egg, Worcestershire sauce, thyme, salt & pepper. Mix ingredients until well combine. Do Not over mix.
2. In a 13 by 9 baking pan shape meatloaf into desired shape. May use bread loaf pan.
3. Mix together topping, ketchup and brown sugar, evenly spread on top of meatloaf.
4. Add water to another baking pan and place on bottom rack in oven. (This will keep MEATLOAF moist and keep top from cracking while baking).
5 Bake MEATLOAF for 55 minutes to 1 hour.
6. Cool MEATLOAF for 10 to 15 minutes before serving.

INGREDIENTS
• ½ medium onion, coarsely chopped
• ½ red bell pepper, coarsely chopped
• ½ green bell pepper, coarsely chopped
• 4-5 garlic cloves, crushed
• 1 tbsp olive oil
• 2 tbsp ketchup
• 1 tbsp Dijon mustard
• 2 tsp Worcestershire sauce
• 1 tbsp beef bouillon paste
• ½ tsp salt
• ½ tsp fresh ground black pepper
• 2 lb ground beef
• 1 lb ground pork
• 2 cups seasoned panko breadcrumbs
• 2 eggs
• ¼ - ½ cup fresh parsley, finely chopped
• 2 tbsp Chef Ange Base Seasoning
• ½ tsp smoked paprika
• ½ tsp Italian seasoning
Ketchup Glaze
• ½ cup ketchup
• 2 tsp low sodium soy sauce
• 2 tsp white wine vinegar
• 2 tbsp brown sugar
DIRECTIONS
1. Preheat oven to 375.
2. In a food processor, finely process coarsely chopped onions, bell peppers and crushed garlic cloves.
3. Sauté process vegetable mix in a pan over medium heat in 1 tbsp oil for 2-3 min or until vegetable soften and release moisture.
4. Add ketchup, Dijon mustard, Worcestershire sauce and beef bouillon paste and sauté for 1-2 minutes. Season with a pinch of salt and fresh ground black pepper. Set aside and let cool.
5. In a large mixing bowl, mix ground beef, ground pork, bread crumbs, eggs, fresh chopped parsley (reserve a pinch or two for garnish), 1 tbsp Chef Ange Base Seasoning smoked paprika, Italian seasoning, and cooled seasoned sautéed vegetable mix. Mix by hand until well mixed. Avoid over-mixing.
6. In a 12” loaf pan, cut a piece of parchment paper the width of the pan with the edges folding over the long side of the pan. Crease and fold paper on the top rim to keep in in place. In layers, pack in meatloaf mix. Be sure to not leave holes and gaps in the filling.
7. Place in preheat oven for 40-60 minutes.
8. While loaf is in oven, mix Ketchup Glaze ingredients and set aside.
9. Remove from oven and evenly brush on Ketchup glaze over top of loaf and place back in oven for another 10-25 min or until internal temp reaches 165F.
10. Let cool for 10 minutes before using the end of the parchment paper to lift the loaf from the pan. Let cool for another 5 minutes before slicing into 1 ½ inch thick pieces.
11. Garnish with fresh chopped parsley.

Start by adding the ground beef, bread crumbs, onion soup mix, eggs, ketchup, and water to a large mixing bowl. Using your fingers, start kneading the mixture together. If you don't wanna get your hands dirty, you can use a wooden spoon instead. Make sure you get all the ingredients properly mixed in. Scoop the meat mixture onto a roasting pan, and shape it into a loaf. Bake the meatloaf uncovered in a preheated oven, at 350 degrees for one hour. Let it rest for 10 minutes before slicing it for serving. If you have any leftovers, pop it in the fridge and use it on sandwiches.

Ingredients:
- Ground Beef (1 1/2 lbs)
- Onion Soup Mix (1 package)
- Onion (1 medium vidalia, sliced)
- Butter (1/4 cup)
- Swiss Cheese (1/2 cup, shredded or sliced)
- Marble Cheese (1/2 cup, to top meatloaf)
- Garlic (4 cloves, minced)
- Italian Seasoning (1 Tbsp)
- Salt and Pepper (to taste)
- Parmesan Cheese (1/4 cup)
- Egg (1 large)
- Bread (1 slice)
- Milk (1/4 cup)
Directions:
- Caramelize onions. To caramelize onions you MUST cook low and slow in a frying pan in butter. This process usually takes about 45 minutes to an hour but worth the wait. By cooking them slow instead of fast it brings out the natural sweetness within the onions. Add butter and onions to a large frying pan on medium low heat, tossing frequently.
- While the onions are caramelizing, prep the other ingredients and make the meatloaf. Using a small plate soak the slice of bread in the milk simply by pouring the milk over it. Set aside. In a large bowl, add the ground beef, onion soup mix, garlic, Italian seasoning, salt, pepper, Parmesan cheese, and egg. Once the milk is soaked into the bread, add the bread as well.
- Preheat your oven to 400 degrees. Before you mix the meatloaf, shred your cheese. To help with he rolling process of your meatloaf, lay out a large piece of saran wrap on your counter. Now thoroughly mix your meatloaf mixture. I use my hands, but you can also use a spoon. Lay it out on the saran wrap, and form a 1 rectangle.
- Once the onions are caramelized your ready to stuff your meatloaf. Evenly spread out your Swiss cheese and then your onions. Using the saran wrap to help guide you, roll the meatloaf, sealing in all sides as you go (see video). Place into a meatloaf pan or baking sheet and top with the marble cheese. Bake for 45 minutes to an hour or until an internal temperature of 165 degrees.
