How To make Sopaipillas(Puffy Fried Bread)
4 cups all-purpose flour
1 1/4 teaspoons salt
3 teaspoons baking powder
3 tablespoons sugar
2 tablespoons shortening
milk (about 1 1/4 cups) salad oil for frying
Sift flour, measure, and sift again with the salt, baking powder, and sugar. Cut in the shortening, and add milk to make a soft dough just firm enough to roll. Cover bowl and let dough stand for 30 to 60 minutes; then roll 1/4 inch thick on lightly floured board and cut in diamond-shaped pieces. Heat about 1 inch of oil in a frying pan to about 370o to 380o. Add a few pieces at a time, turn at once so they will puff evenly, then turn back to brown both sides. Drain on paper toweling. Makes 4 dozen or more.

In today’s video, I am sharing the secret to perfect golden puffy sopapillas! This sopapilla recipe is easy, delicious, and the sopapillas are perfect, golden and puffy every time!
Sopapillas are a delicious dough that has been fried until golden and crispy and have hollow center, and drizzled with honey or dusted with powdered sugar. This sopapilla recipe is a fun family favorite dessert, and is perfect treat for any New Mexican, Tex-Mex, or Mexican dinner.

INGREDIENTS:
2 1/2 cups all purpose flour, NOT packed!!
2 teaspoons of baking powder
1 teaspoons of salt
2 tablespoons cooking oil
1 cup of hot water
2 inches of vegetable oil in a pan to fry
Toppings: honey, powder sugar
▶️combine flour, salt, baking powder and whisk together.
▶️ add the vegetable oil and incorporate until crumbly.
▶️add the hot water until a dough forms.
▶️ knead dough by hand OR the dough hook in a mixer for about 5-10 minutes, dough becomes softened and pliable.
▶️cut dough in 4 equal parts and round into a ball. Cover dough balls in a bowl with a dish towel and leave it sit for 20 minutes.
▶️ roll each dough ball into 1/8 inch thickness, too thick of dough and the sopapillas won’t puff up⚠️and cut the dough into equal sections with a knife or a pizza cutter.
▶️ in a large pan add about 2 inches of oil for frying the Sopapillas over medium heat. Heat oil until 375 degrees. ⚠️It’s very important to have the oil hot enough or they won’t puff!. I only fry a couple of sopapillas at a time and until golden brown on each side.
▶️ let the sopapillas cool and choose whatever toppings you desire!
▶️drizzle with honey or powder sugar! And enjoy ????!

This week, they are sharing their recipe with Casey Messer.

Recipe:
4 cups all-purpose flour

1.5 cups warm water
2 qts oil for frying
Directions:
In large bowl, stir together flour, baking powder, salt and shortening. Stir in water; mix until dough is smooth. Cover and let stand for 20 minutes. Roll out on floured board until 1/8 to 1/4 inch thick. Cut into 3 inch squares. Heat oil in deep-fryer to 375 degrees F (190 degrees C). Fry until golden brown on both sides. Drain on paper towel and serve hot.
