Miso butterfish aka Black cod is one of my favorite ways to prepare fish. The sugar really helps to achieve that amazing char on top.
Miso butterfish
1/4 cup dry sake
1/4 cup mirin
1 tbsp white sugar
2 tbsp sweet white or yellow miso

500g Saltfish /Salt Cod
1 garlic clove
1/2 white onion
3 seasoning peppers / pimento peppers /bell peppers
2 spring onions
1 tsp coconut oil
Black pepper to taste
Pinch of mixed herbs (optional)
1 cup plain flour
1/4 tsp black pepper
1/4 tsp baking powder
1/2 tsp yeast
1/4 tsp turmeric powder
1/2 cup water
Pinch of salt (optional to taste)
Oil for frying
Mango chutney (optional)

Baked Puffy Fish Tacos - Easy Crispy Fish Tacos - Food Wishes
I had to cheat and use flour tortillas, and some might argue this is closer to a tostada, but in my world, if it’s on a tortilla, and you can fold it, it’s a taco. So, with that said, I will proclaim this to be the best fish taco ever, baked or otherwise. Enjoy!

Puff Pastry Salmon (Salmon Wellington)
Here is what you'll need!
Serves 2
Ingredients
2 tablespoons butter
2 cloves garlic, chopped
½ medium onion, chopped
5 ounces spinach
1 teaspoon salt (for spinach)
1 teaspoon pepper (for spinach)
⅓ cup breadcrumbs
4 ounces cream cheese
¼ cup Parmesan, shredded
2 tablespoons dill, chopped
1 sheet puff pastry, softened to room temperature
1 salmon filet
1 teaspoon salt (for salmon)
1 teaspoon pepper (for salmon)
1 egg, beaten
Preparation
1. Preheat oven to 425°F.
2. In a pan over medium heat, melt butter.
3. Add the garlic and onions, cooking until translucent.
4. Add the spinach, salt, and pepper, cooking until spinach is wilted.
5. Add the breadcrumbs, cream cheese, parmesan, and dill, stirring until mixture is evenly combined. Remove from heat and set aside.
6. On a cutting board, smooth out the sheet of puff pastry. Place the salmon in the middle of the pastry and season both sides with salt and pepper.
7. Place several spoonfuls of the spinach mixture on top of the salmon, smoothing it out so that it does not spill over the sides.
8. Fold the edges of the puff pastry over the salmon and spinach, starting with the longer sides and then the shorter ends. Trim any excess pastry from the ends, then fold the ends on top. Flip the puff pastry-wrapped salmon over and transfer for a baking sheet lined with parchment paper.
9. Brush the beaten egg on the top and sides of the pastry.
10. Score the top of the pastry with a knife, cutting shallow diagonal lines to create a crosshatch pattern.
11. Brush the top again with the egg wash.
12. Bake for 20-25 minutes, until pastry is golden brown.
13. Slice, then serve!

Easy Crispy Battered Fish Recipe | Lemon Herb Tartar Sauce Recipe
Today I am making crispy fried fish with a homemade lemon herb tartar sauce. This recipe is similar to a beer battered fish with out the beer.
INGREDIENTS
2 to 3 lbs Cod Fish
salt and pepper to preference
1/2 cup all purpose flour for dredge
OIL for frying
BATTER INGREDIENTS
1 3/4 cup (250 g) all purpose flour
1 tsp onion powder
1 tsp paprika
1 tsp lemon pepper
2 tsp baking powder
1/2 tsp salt
15 oz (450 ml) mineral water
LEMON HERB TARTAR SAUCE (I did not weigh ingredients)
1 1/2 cups mayo
1 to 2 TBSP sweet relish
juice of half of large lemon
1 TBSP lemon zest
2 TBSP fresh chives
1 TBSP fresh dill
1/2 to 1 tsp lemon pepper
1/4 tsp onion powder
