Vegan Sopa de Fideo
Vegan Sopa de Fideo. A childhood favorite gone vegan. Noodles toasted until golden brown then simmered in a tomato-onion broth unitl tender.

Sopa de Fideo (Mexican Noodle Soup)

Ingredients:
1 tbsp. Oil (optional)
8 oz. Angel hair pasta or whole wheat thin spaghetti, broken into 1 in. pieces
1 can (14.5 oz) Diced tomatoes or 2 cups of fresh diced tomatoes
1/2 Onion, white, chopped
3 Garlic cloves, peeled
10 cups Vegetable stock
1 Mexican zucchini, diced
1 Lime, cut into quarters
Instructions
In a medium pot get your vegetable stock boiling hot and set aside.
Set a large pot to medium heat and add oil. Once the oil is hot add broken up noodles and toss to coat in oil. Continue to cook until noodles are golden brown, about 3 minutes.
While the noodles are browning, place the tomatoes, onion, garlic, and 2 cups of the vegetable stock in the blender and process until smooth.
Strain this mixture directly into the golden noodles still in the hot pot. Stir to prevent the noodles from sticking.
Let the mixture simmer for 1 minute. Add the rest of your stock and set heat to high. Add zucchini and cook noodles at a low boil until noodles are al dente and zucchini is tender. Stir often. Season.
Serve with a wedge of lime so everyone can add as much lime juice as they like.
Notes
For this version, I used canned tomatoes because tomatoes are not in season right now. If it's summer I recommend you use fresh tomatoes.
You can add zucchini, carrots, beans or potatoes to this for higher nutritional value.
You can also make this soup using alphabet pasta to make sopa de letras.
To make this recipe without oil set the pot to medium-low heat and add the noodles. Dry toast the noodles until golden brown stirring constantly, about 3 minutes. Continue with the rest of the recipe as written.
I like to add a sprig of cilantro with the zucchini, but that is completely optional.
For a lot of us, the food memory of this soup is associated with the flavor that knorr chicken flavor bouillon gives to the soup. To substitute this, I recommend using Better than Bouillon No Chicken Base

When I think of FIDEO WITH GROUND BEEF AND POTATOES, I think of my childhood, I remember coming home from school and my momma having a big pot of this wonderful dish on the stove waiting for us. She prepared this dish throughout the year, Winter or Summer and not only is it delicious and easy but it’s very affordable and it goes a long way. Everyone I know loves this dish, and children love it too. We always had it with delicious beans on the side and freshly made tortillas. A delicious soup that is perfect for a cold, rainy day or just perfect to have it everyday ???? it’s just simply delicious by itself of topped with some of your favorite toppings! Ingredients:
7 1/2 oz of fideo
4 tbsp vegetable oil
4 Roma tomatoes
1/2 white small onion
2 garlic cloves
Small bunch of fresh parsley
1 package of sazón Goya
1 chicken bouillon
1 tsp ground cumin
Salt to your liking
6 cups of water you can also use chicken broth

SOPA DE FIDEO CON POLLO! ❤ easy CHICKEN AND FIDEO SOUP!
This SOPA DE FIDEO CON POLLO takes me way back to my childhood, my momma fixed it often, I remember coming home from school to find my momma waiting for us with this SOPA, she always had something delicious ready and waiting for us, she would make a big pitcher of Kool Aid to go along with it, we were very poor, and it was a very inexpensive dish to fix, but we were blessed to have it as it tastes delicious and is one of my forever favorites. ❤
INGREDIENTS
1/4 C. diced carrots
1/2 small chopped onion
1 celery rib (sliced)
1/3 C. diced green bell pepper
1 1/2 Tbsp tomato paste
1 serrano pepper
1 C. crushed canned tomatoes from my garden (you can use fresh or canned)
1 large russet potato cubed medium
6 oz. fideo
3 med size garlic cloves
1/2 tsp whole cumin
1/2 tsp peppercorns
2 Tbsp chopped cilantro (for last)
3 bone-in chicken legs(with some skin)
3 bone-in chicken thighs (no skin)
Water as needed (I used 5 cups total)
•add 1 Tbsp oil in deep pot
•add chicken and sear 4 minutes
•flip chicken and sear 4 more minutes
•MEANWHILE, grind spices with (1 cup water)
•remove grease and leave 1 Tbsp if alot
•add onions, celery, carrots, and peppers (saute 2-3 minutes)
•add tomatoes and tomato paste saute about 3 more minutes
•add 4 cups hot water and low boil for about 10 minutes
•add potatoes and continue cooking about
15 minutes
MEANWHILE brown fideo in 1 1/2 tsp oil till golden brown
add fideo to soup and cook for 7 minutes and add chopped cilantro and remove from heat
•serve
