Cannellini Dip Recipe!
Ingredients:
- 2 cloves garlic, chopped - 2 cans Cannellini or Great Northern Beans - 1/2 cup extra virgin olive oil - Juice and zest of one lemon - 3/4 cup grated parmigianno-reggiano - 1/2 cup Italian flat-leaf parsley, finely chopped - kosher salt, freshly ground black pepper, red pepper flakes, to taste
Directions:
1. Combine beans, garlic, and lemon juice in a food processor and pulse til pureed. Slowly drizzle in olive oil til combined.
2. Remove from food processor and fold in cheese and parsley. Season with salt, pepper, and red pepper flakes to taste.
3. Transfer to a serving dish, drizzle with olive oil and a sprinkle of chopped parsley. Serve with crostini and crudites.
4. EAT IT.
