How To make Skillet Caramel Apple Cake
1 3/4 c Sugar
2 tb Water
2 tb Butter
1 1/2 ts Almond extract
3 lb Apples; golden deliciuos
1 c Cake flour
1 1/2 ts Baking powder
1/2 c Apple juice
2 tb Amaretto
1 Egg
2 Egg whites
1 c Whipped topping (opt)
Combine 1 cup sugar and water in heavy, deep, oven-proof 10" skillet. Bring to boil over medium heat, stirring occasionally. Cook to light caramel stage or pale amber color, stirring occasionally. Remove from heat. Swirl in butter and 1/2 tsp almond extract. Set aside. Peel, core and cut each apple into 4 wedges. Arrange about 3/4 of apple in tight single layer over caramel. Cut remaining apple wedges in halves and place atop first apple layer. Cover skillet and cook over medium-low heat until apples exude juices, about 10 minutes. Uncover skillet, increase heat to medium and continue cooking about 25-30 minutes, or until caramel syrup is thick, but not burnt (adjust heat to low if caramel starts cooking too fast). Baste apples occasionally with caramel syrup, using baster or spoon. Remove from heat and cool. Sift cake flour with baking powder and 1/2 cup plus 2 Tbsp sugar in bowl. Make well in center. In another bowl, whisk egg, apple juice, and remaining 2 Tbsp sugar, then beat until stiff but not dry. Fold small amount of batter into egg whites, then fold mixture back into remaining batter. Pour over apples in skillet. Bake at 350~ for 25-30 minutes, or until wood pick inserted in center of cake comes out clean. Cool 5 minutes. Loosen cake around edges. Place platter over skillet and carefully invert pan, shaking gently to release cake into platter. Spoon any remaining glaze over cake. Serve with whipped topping. Makes 12 servings. -----

My daughter adapted my standard apple upside down cake to work with vegan baking ingredients like oat milk, cashew butter and applesauce as an egg replacement. It all worked very well yielding a tender cake with a rich buttery flavor.
We used Miyoko's vegan butter which really did a fantastic job. It behaves and tastes like dairy butter in the recipe, we even spread some on toast just to see if it really tastes like butter and it really does!
To give our vegan cake a sweet topping we used Muddy Pond Sorghum Syrup it's similar to molasses but with a milder flavor. You can substitute a wide variety of sweeteners for sorghum. Use maple syrup, brown sugar, cane syrup or sugar in the raw syrup.

This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.
