Sicilian Eggplant Caponata Recipe
Sicilian eggplant Caponata is a traditional sweet and sour recipe, made with all produce grown locally: peppers, eggplants, celery, capers, basil, nuts, and raisins. It is served as an appetizer on bruschetta or as a side dish for grilled meat. It is easy to make and best if made ahead of time. The eggplants absorb all the flavors and the Caponata will taste even better the following days.

Ingredients:
3 lbs breaded fried eggplant
1.5 qt marinara sauce
16 oz grated pecorino
3 tbs dried oregano
6 ea. eggs
Directions
1. In a bowl mix all of the marinara, three eggs, oregano and half the pecorino.
2. In an oven ready pan start with thin layer of sauce then a layer of eggplant and a sprinkle of pecorino.
3. Repeat this process until all eggplant is used.
4.Separate the yolks from the remaining three eggs.
5. Add yolks to the top of the eggplant and swirl around using your fingers.
6. Bake at 350 for 40 mins.

Eggplant Caponata, a Sweet & Sour Vegetable Stew
Eggplant Caponata is a Sicilian style of ratatouille with an intense jammy flavour. What makes this uniquely different is the sweet and sour flavours made from sugar and vinegar. Make sure you fry the eggplant nicely, that’s the secret to that creaminess. It’s the hero of the dish. Caponata is delicious served on crusty toasted bread, as a side of veges with swordfish, octopus or any seafood, or even mixed in plain pasta with a little cheese. I like mine with lots of fresh basil. The pine nuts are optional, but enhance the dish with crunchy texture and bursts of nuttiness. Enjoy my Eggplant Caponata today!

Sicilian Caponata is a sweet and sour dish made with eggplants, olives, peppers and more is surprisingly hearty for being vegan.
INGREDIENTS:
Olive oil
1 eggplant, cut into cubes
1 onion, chopped
1 red bell pepper, chopped
2 celery stalks, chopped
1 Tbsp capers
½ cup Castelvetrano olives, sliced
3 garlic cloves, minced
Pinch of pepper
1–2 Tbsp red wine vinegar
1 Tbsp balsamic vinegar
Zest of ½ lemon
2 Tbsp tomato paste
½ cup sugar
1 can diced tomatoes
Sliced baguette, to serve
STEPS:
1.) Add olive oil to a sauté pan over medium heat. Once oil starts to shimmer, add eggplant cubes. Cook, while stirring, until eggplant begins to brown. Remove from pan and reserve.
2.) In the same pan, add the onions, red bell peppers and celery. Stir to combine. Cook until the veggies begin to soften, then add the capers, olives, garlic and pepper.
3.) Add red wine vinegar and balsamic vinegar and stir to combine. 4.)Add lemon zest and tomato paste, and stir to combine.
5.) Sprinkle sugar over top and add canned tomatoes. Return eggplant to pan, and stir altogether. Simmer over medium-low heat until thick and slightly reduced.
6.) Serve warm or cold with sliced baguette.

Caponata Siciliana- the classic sicilian eggplant appetizer... made my way.
Few dishes taste so distinctly of Sicily as a delicious Caponata. Made of eggplant, peppers, green olives, onions, capers, tomato and most importantly sugar and vinegar to transform this wonderful mixture of ingredients into something sublime! A wonderful appetizer served cold with bread or even as a topping for bruschetta... It makes for a great start to any Italian meal, or it can be a meal in itself. Traditionally there would be plenty of deep frying involved - but check out my video and see how I make a much lighter and healthier version that lacks absolutely nothing in flavour... Enjoy!
