Persian Eggplant Dip: Kashke Bademjan

Ingredients
2 eggplants, peeled and sliced
olive oil
1 large onion, halved and sliced
4-5 garlic cloves, grated
salt, to taste
freshly cracked black pepper, to taste
1/8 teaspoon ground turmeric
saffron broth: a pinch of saffron and 3/4 cup boiling water
2-3 tablespoons kashk, Greek yogurt, or sour cream
2 tablespoons dried mint leaves
Instructions
Season the eggplant slices liberally with salt and place them in a collander. Place a plate on top to weigh them down and set aside for 30-60 minutes. The eggplant will release lots of liquid. Drain it and discard. Pat them completely dry using paper towels.
In the meantime, make the saffron broth by adding a pinch of saffron to a small pitcher. Pour 3/4 cup of boiling hot water into the pitcher and set aside.
Make the caramelized onions: Place the onions, a quarter cup (or more) olive oil in a skillet. Season with a pinch of salt and cook over medium heat until soft and caramelized. Add the garlic and warm through until fragrant. Season with mint and turmeric and warm through. Reserve a quarter of this mixture to use as a garnish.
Heat some oil in a frying pan and fry the eggplant slices in several batches until soft and golden.
Alternatively, you may roast the eggplant in a preheated 425 °F oven until tender.
Once the eggplants are finished frying transfer them to a tray lined with paper towels to absorb the excess oil. Chop the eggplant and add it to the pan with the onions.
Add the saffron broth and cook it over medium-heat for 15 minutes. Add more water if necessary. Mash the eggplant. Taste and adjsut the seasoning if needed. If the eggplant still has a bit of a bitter taste add a half teaspoon or more of sugar.
Add the kashk and mix together.
Transfer the dip to a serving plate. Garnish with the reserved onions, some dried mint, and drizzle some kashk over the top.
Serve this dip with toasted pita bread.

Melitzanosalata | Greek Eggplant Dip
Ingredients for Melitzanosalata | Greek Eggplant Dip:
3 medium to large eggplants
4 tablespoons of extra virgin olive oil
2 cloves of garlic
1 small onion
Small bunch of fresh parsley
Salt
Fresh cracked black pepper to taste
Directions:-
1. Wash and dry your eggplants, with a fork pierce the skin in multiple places.
2. On a hot Barbecue grill roast your eggplants for about 20 minutes turning about 3 times.
3. With a knife pierce the eggplant to see if it’s cooked through.
4. Remove and let it sit in a bowl until cooler to handle
5. On a cutting board cut eggplant in half, with the help of a large spoon scoop out all the flesh going as close as possible to the skin. That allows the charred part to be removed and that’s what gives it the smokiness flavor.
6. Let the pulp of eggplant drain in a colander.
7. Now chop your onion and parsley and set aside.
8. Chop the garlic on a cutting board.
9. Add a 1/2 teaspoon of salt and with the tip of a fork, mash until a paste is created.
10. In a larger bowl place your eggplant pulp, onion, parsley, garlic, and oil. Adjust salt and crack some black pepper on.

Baba Ganoush
Ingredients:
• 2 large or 3 medium eggplants
• 2 green chilies
• 1 paprika pepper (or red bell pepper)
• 1 tomato
• 2 cloves of garlic
• ½ red onion
• 2 tbsp olive oil
• 2 tbsp pomegranate molasses
• 1 tbsp lemon juice
• 2 tsp chili flakes (optional for the heat)
• 1 tsp salt
• ½ tsp black pepper
• Chopped parsley to garnish
Instructions:
1. Poke the eggplants and roast on the stove top for 15 minutes until nicely charred, rotate every 5 mins
2. Roast the chilies and the tomato in the oven for 30 minutes at 200°C / 390°F
3. Transfer eggplants to a bowl, cover with a plastic wrap or lid, this will make the peeling easier
4. Peel the skins of the vegetables and roughly chop the eggplants to small chunks
5. Transfer the chopped eggplants to a bowl
6. De-seed the chilies and roughly chop the chilies, tomatoes and add into the bowl
7. Finely mince the garlics and finely chop the onion add into the bowl
8. Add 2 tsp salt, 1 tsp cumin, ½ tsp black pepper and optionally 2 tsp chili flakes (pul biber) for heat
9. Finally add 2 tbsp olive oil, 1 tbsp lemon juice and mix to combine
10. Transfer to a bowl and gently layer the mixture
11. Serve and garnish with pomegranate molasses and chopped parsley
Mutabbal
Ingredients:
• 2 large or 3 medium eggplants
• 1 clove of garlic
• 3 tbsp tahini (substitute or add yogurt to taste for the Turkish version)
• 1 lemon (juice) (about ¼ cup)
• 1 tsp cumin
• 1 tsp salt
• Pinch of freshly ground black pepper
• 1 - 2 tbsp olive oil to garnish
• pomegranate seeds and sumac to garnish
Instructions:
1. Chop the peeled and roasted eggplants in small chunks and add into the bowl
2. Mince and grind the garlic together with 1 tsp salt and add into a small bowl
3. Squeeze 1 lemon (1/4 cup lemon juice) and add into the garlic together with 1 tsp ground cumin
4. Mix and let the mixture sit for 5 - 10 mins for the garlic flavor to infuse
5. Strain through a sieve (optional to filter garlic bits and mellow down the flavor) and add into pot.
6. Season with a pinch of freshly ground black pepper
7. Finally add ¼ cup tahini and mix with a fork or whisk to smash and combine
8. In Turkey and Syria, along with tahini, equal amount of yogurt can also be added
9. Garnish with olive oil and pomegranate seeds and optionally with fresh mint and sumac
