How To make Sicilian Pot Roast
4 lb Beef rump roast
2 oz Salt pork, chopped
8 Black olives
8 Stuffed green olives
1 lg Can crushed plum tomatoes
Flour for dredging 1 lg Onion, sliced
Salt/pepper 1/4 c Raisins
4 T Olive oil
1 Garlic clove, chopped
Cut slits into meat and stuff alternately with black olives, stuffed olives, bits of garlic and salt pork. Dredge the meat with flour and brown in hot oil. Add tomatoes, raisins, and onions; season with salt and pepper. Cover and cook in moderate 350 degree oven 2 1/2 hours or until tender. Check occasionally, and add water if needed.

SICILIAN CHICKEN CASSEROLE - By RECIPE30.com
A moist chicken casserole that has a crispy chicken skin, with olives and baby potatoes.

This oven cooked casserole is a little different as the lid is removed through the cooking process allowing the skin to crisp up. The meat is juicy and tender, the shallots are caramelised and the potatoes packed with flavour. It's easy to make, ideally buy a whole chicken and use the carcass to make your own chicken stock. For convenience, I used pitted green olives for this recipe, however olives that you pit yourself will always have a better flavour.
One average size chicken should serve four people. Buy a good organic free range bird for a fantastic dish.
Sicilian Style Italian Braciole
This Braciole recipe is the way my mother use to prepare it . It does take some practice rolling up the stuffed slices of beef but once you get the knack of it it will become much easier. If you prefer you can use pork instead of beef .Also you can leave out the hard boiled eggs but it just won't be the same without it ! It is important to cook the meat for several hours so that it will become soft and tender .

2 Pounds Top Round Meat or Flank Steak
1 Cup Seasoned Bread Crumbs
1 Chopped Onion
3-4 Hard Boiled Eggs Chopped
Chopped Parsley
Freshly Grated Pecorino Romano Cheese
Olive Oil
Salt and Pepper
Tomato Sauce:
1 Can Chopped Tomato
2 Cloves Chopped Garlic
Basil
Olive Oil
Salt
Red Wine

1/2 ------------Lime or Lemon
1tb --------- Tomato Paste
1tbs ------- Paprika Flakes
150g ------- Olives
100g ------- Capres
Salt and Black Pepper- Lemon Pepper (to taste)

5-6-------Slice of Olive
3--------Fillet of Anchovy
1tbs ----Fried Capers
1tsp----- Lemon Zest
