How To make Shredded Chocolate Banana Cake
2 c All purpose flour, unsifted
1 ts Baking soda
1/4 ts Baking powder
1/4 ts Salt
3/4 c Bittersweet chocolate,
-grated 3 Bananas, fully ripe
1/4 c Half-and-half
2 ts Vanilla extract
6 tb Unsalted butter, room temp.
2 tb Shortening
1 c Sugar
2 Eggs, room temp.
Confectioner's sugar(option) Butter or spray with non-stick cooking spray a 9x5x3-inch loaf pan; set aside. Preheat oven to 325 degrees. Sift flour, baking soda, baking powder and salt onto a sheet of wax paper. Place the grated chocolate in a bowl and stir 1 ts of the sifted mixture; set aside. Mash bananas in a bowl and stir in half-and-half and vanilla; set aside. In the bowl of an electric mixer, cream butter and shortening on moderate speed for 3 to 4 minutes. Raise speed to moderately high, add half of sugar and beat for 1 minute; add remaining sugar and beat 1 minute longer, scraping down sides and bottom of the bowl. Add the
eggs one at a time, beating well after each addition. Blend in banana mixture on low speed. On low speed, blend in flour mixture in 2 additions, beating just until particles of flour have been
absorbed. Stir in chocolate by hand. Pour and scrape the batter into the prepared pan. Bake for 1 hour or slightly longer - until risen, golden brown on top, and a wooden pick inserted in center comes out clean and dry. Cool on a rack for 3 to 4 minutes. Carefully invert onto a second rack, remove pan and invert the cake again to cool right side up. Sift confectioner's sugar on the top.

Hope you’ve watched my previous upload on the Banana Bread – that recipe was Banana Bread with spices and nuts. This time round it’s the chocolate version!
Previous Banana Bread Recipe:
▶Chocolate Banana Bread◀
Yield: 2 x mid-sized pound cake pans (15cm x 7cm x 6cm, somewhere around 700ml in volume)
Bananas 280g (Ripe bananas pls!)
Butter 72g
Grapeseed Oil 16g
Light Brown Sugar 130g (can use white sugar but light brown sugar recommended)
Whole Egg 90g
Vanilla Extract a few drops
All purpose flour 155g
Cocoa Powder 16g
Baking soda 3g
Salt a pinch
Dark Couverture Chocolate 120g (80g melted, 40g unmelted)
① Mash the bananas.
② In a bowl add the banana, melted butter, oil, sugar, egg, vanilla extract and whisk.
③ Sift in the flour, cocoa powder, baking soda, salt.
④ Add in the melted couverture chocolate followed by unmelted couverture chocolate.
⑤ (pre-heat 160℃) 160℃ for 40~50mins. You MUST adjust baking temp/time due to the difference in the pan size.
⑥ Personally, I prefer wrapping the banana bread in cling film and storing at room temp to serve the next day for optimal tenderness.
▶Baking time / temp◀
Everyone uses different sized pans – so adjust baking time & temperature. I’ve explained in the video on “how to check” if your banana bread is baked well. My advice is to stick to 160℃ and adjust the time first - if it takes too long to bake even after extending the time, than raise the temp by 10~15℃. (I know my suggested baking temperature is lower compared to a lot of those recipes out there – I prefer baking at lower temp for longer)
▶Quickly ripening bananas◀
① Put banana into a paper bag with an apple inside. Check back after half a day and leave it longer if not ripe enough.
② Another super quick way would be to bake unpeeled bananas at 150℃ (pre-heat 150℃) for 15~30mins. The banana will turn black but that’s ok.
▶How to store / Shelf life◀
Air-tight container for 3 days at room temp. It’s possible to store in the freezer up to 2wks.

Ingredients :
3 Eggs
120G Brown Sugar or stevia Powder or honey
30G Dark Cocoa Powder
70G Cornstarch or Rice ,chestnut flour
10G Baking Powder
2 Mashed Bananas
40G Corn Oil
Shredded Dark Chocolate
Steps :
Beat the Fresh Eggs with Brown Sugar .
Add the Dried Ingredients (Cornstarch ,Baking Powder and Dark Cocoa Powder).
Incorporate the mashed Bananas.
Add the corn Oil.
Brush the cake pan with Oil , then Pour the mixture.
Sprinkle it with Shredded Dark Chocolate.
Bake it for about 45 Minutes At 180°C .
Let it cool completely at room temperature before serving.

Chocolate Banana Cake Recipe
Chocolate Banana sponge cake: This delicious cake preparing with banana and chocolate Transfer the 4 egg whites into a large bowl Add half a cup of sugar Keep beating untill eggs are really thick and white Take the egg yolks in another large bowl Add half a cup of sugar Add 3 tbs. Vegetable oil And 3 tbs. of hot water Add flour, fanilla powder and baking powder after you sift them Add the egg whites Slowly mix it as you see here Dust some flour into the greased cake pan, to avoid sticking Cover the bottom of the tray with aluminum foil Make sure it is spread evenly Bake for around 20 to 25 minutes on 170C (330F) pre-heated oven. for delicious Chocolate cake :)
