How To make Scottish Oaten Bread with Coke
2 c All-purpose flour
1 c Rolled oats, old-fashioned
1/2 c Sugar
2 1/2 ts Baking powder
1/2 ts Baking soda
1 t Salt
1 lg Egg
3 tb Oil, or shortening, melted
1/2 ts Vanilla extract
1 c COCA-COLA
1 c Prunes, very well drained
- and coarsely chopped, OR - 1/2 c dried prunes 1/2 c Walnuts, chopped
Prune halves, optional
Lightly spoon the flour into a measuring cup, level off. . In a large bowl, stir together the flour, rolled oats, sugar, baking powder, baking soda, and salt. In another bowl, beat with a fork, the egg, oil, and vanilla extract until well blended. Add to the flour mixture. Add the Coca-Cola, prunes, and nuts, blend thoroughly with a spoon. Turn into a well-greased, lightly floured, 9 x 5 x 3-inch loaf pan. Garnish with prune halves, if desired. Bake in a preheated, 350 F oven for about 1 hour or until a wooden toothpick inserted in the centre comes out cleans. Cool on a rack for 20 minutes before removing the bread from the pan. Store in foil overnight before slicing.

5 cups (450 g) rolled oats OR 3+2/3 cups oat flour
1+3/4 cups (150 g) quick oats
2 tsp baking powder
1 tsp baking soda
1 ½ tsp salt
1 Tbsp sugar
2 cups (500 g) plain yogurt 1,5 %
1 Egg (medium size)
????????Instructions:
????Preheat oven to 390 F (200 C). Line a bread pan (8x4 or 9x5 inches) with parchment paper, or lightly grease with cooking spray. Set aside.
✅Grind rolled oats in a blender or food processor until they reach a flour-like consistency.
✅Mix dry ingredients. Add in oat flour, quick oats, baking soda, baking powder, salt and sugar in a mixing bowl. Add the yoghurt and egg and mix everything with a spatula. Then knead with a hands to make a smooth dough.
✅Form the dough into a round loaf about 25 cm long, roll the loaf in the rolled oats and seeds. ✅Place into the baking pan and bake about 1 hour, until a toothpick inserted in the center of a cake comes out clean
✅Allow to cool completely.

Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!

1800s Scottish Broonie Recipe - Glen And Friends Old Cookbook Show
This is an Orkney Oatmeal Gingerbread recipe found in an old scottish cookbook that was trying to preserve even older Scottish recipes that were at risk of disappearing. At its core Scottish Broonie / Brüni means 'A thick bannock' and this oatmeal gingerbread bannock was eaten mostly in Orkney and Shetland.
Scottish Broonie Recipe:
Oatmeal, flour, brown sugar, butter, ground ginger, baking-soda, treacle, egg, buttermilk.
Mix in a basin six ounces of oatmeal and six of flour. Rub in two ounces of butter. Add a teaspoonful of ground ginger and barely three-quarters of a teaspoonful of baking-soda, free from lumps.
Melt two tablespoonfuls of treacle, and
add, together with a beaten egg and enough buttermilk to make the mixture sufficiently soft to drop from the spoon.
Mix thoroughly. Turn into a buttered tin and bake for from one to one and a half hours in a moderate oven till well risen and firm in the centre.
Correctly, Brüni, a thick bannock (Orkney and Shetland).

Homemade Scottish Bannocks & Butter | Frugal Foods | Simple Living | Black Isle Dairy
A traditional accompaniment to bulk up a meal, bannocks were once a staple in many peoples diet.
There are many recipes available with slightly differing ingredients, however this the one I have adapted which works for me.
This recipe make 2 rounds, which would be 8 bannocks, however it would depend how thick your mixture was.
3 cups of Self Raising flour.
2tbs Baking Powder
1tsp Salt
2 tbs Fat( Butter, lard etc)
1-2 cups milk
Cooking oil
Mix the dry ingredients.
Add the fat & rub in until it resembles breadcrumbs
Gradually mix in the milk untill it forms a thick batter.
Heat the pan, skillet or griddle
Add a little oil.
Make sure the pan is hot enough to hear a sizzle but not hot enough to burn the batter.
Place the batter in the pan and press down slightly.
Cook for about 10-15 minutes each side untill golden brown in colour. Make sure it is cooked all the way through.
Once cooked remove from the pan and allow to cool before serving.
I have had many bannocks that have turned out very well, I have also had lots that were a little doughy in the middle when they havn’t cooked the entire way through.
As my mum use to say, these will stick to you ribs ‘till tea time.

- 175g Strong white bread flour
- 175g Wholemeal flour
- 1 tsp Bicarbonate of soda
- 25g Butter
- 250ml Buttermilk
- 2 tbsp Treacle
- Porridge oats (sprinkling)
