Biscuits:
1 cup self rising flour
2 Tbsp solid shortening
1/3 cup buttermilk
pinch salt
2 Tbsp melted butter
Stir flour and salt together. Cut in shortening. Add buttermilk. Mix well. Put out onto floured surface. Knead a few times. Pat flat. Cut out biscuits, making sure not to twist the biscuit cutter. Pat extra buttermilk on top of biscuits. Add to a greased baking pan.
Bake 450 degrees 15 minutes. Brush with melted butter.
Gravy:
2 Tbsp grease
2 Tbsp flour
1 1/2 - 2 cups whole milk (this is approximate)
salt & pepper to taste
Sausage, browned and crumbled
Be sure to have enough grease to be 2 Tbsp. Add flour. Cook 2-3 minutes to cook out raw flour taste. Salt and pepper to taste. Add milk, beginning with 1 cup. Stir well. Add milk until desire consistency.

Sausage Gravy

Ingredients
1 pound breakfast sausage, hot or mild
1/3 cup all-purpose flour
3 to 4 cups whole milk, more to taste
1/2 teaspoon seasoned salt
2 teaspoons freshly ground black pepper, more to taste
Biscuits, warmed, for serving
Directions
With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
Spoon the sausage gravy over warm biscuits and serve immediately!

Recipe
Biscuits
Ingredients
- 425g flour
- 20g sugar
- 15g baking powder
- 2g baking soda
- 10g salt
- 225g unsalted butter frozen
- 300ml buttermilk
Method
1. Start by placing the flour, sugar, baking powder, baking soda and salt into a large mixing bowl.
2. Next, grate your frozen butter into the bowl and lightly toss, making sure the butter is evenly distributed.
3. Make a well in the centre and pour in your buttermilk. Mix this until your dough has just started to form then turn it out onto a floured bench.
4. Bring the dough into a rectangular shape and fold it twice like you're folding a letter for an envelope.
5. Turn this 90° and roll it with a rolling pin and repeat the folding step.
6. Repeat the last two steps four more times.
7. Once your folding has finished, cover with clingfilm and rest in the fridge for at least 1 hour.
8. Preheat your oven to 200°c. Remove the dough from the fridge, roll it out so it's roughly 3cm thick. With a knife cut into six even pieces.
9. Brush this with some melted butter and flaky salt and bake for 25 minutes or until doubled in size and golden brown.
**Sausage and gravy**
- 6 sausages
- 2 tbsp flour
- 50g butter
- 230ml milk
- Chives, finely sliced
- Salt and pepper to taste
**Method**
1. Take your sausages out of the skins and break them up in a saucepan over medium-high heat. Once they're broken up and have some nice colour, add the butter to the pan.
2. Once the butter is melted, add the flour and stir well - you should end up with a smooth roux.
3. Pour in the cold milk and stir until you have a smooth sauce. Season with salt and pepper.
4. Serve the gravy over the warm biscuits and finish with some chopped chives. Enjoy!

The ultimate comfort breakfast! Fresh out of the oven buttery biscuits, topped with a creamy flavorful sausage gravy. It makes you feel all warm inside!
Just a note, please see the ingredient list below, as the baking powder was somehow mistakenly left out of the ingredients for the biscuits in the video. Simply add it along it along with the other dry ingredients.

Biscuits:
2 cups all purpose flour
3/4 teaspoon sea salt

1/4 cup cold butter
3/4 cup milk
2 teaspoons white vinegar
1 Tablespoon melted butter
Bake at 450 degrees for 15 minutes.
Sausage Gravy:
1/2 LB pork sausage
2 Tablespoons butter
1/3 cup all purpose flour
3 1/2 cups whole milk
1 teaspoon sea salt
1 teaspoon black pepper
