RECIPE (Makes 2 pizzas + extra ground beef)
---
TACO MEAT
▪2lb 90/10 ground beef
▪Salt
▪150g onion (1 small onion)
▪15g (5-6 cloves) garlic, minced
▪25g or 3Tbsp chili powder
▪15g or 2Tbsp cumin
▪10g 1 1/4Tbsp paprika
▪2g or 3/4tsp cayenne
▪2g or 1tsp oregano
▪425g/15oz tomato sauce
▪400g or 1 2/3c chicken stock
▪10g or 1Tbsp brown sugar
▪10g or 3/4Tbsp cider vinegar
Heat large saute pan over med-high. Add ground beef and break apart as much as possible. Add large pinch of salt and continue to break apart as beef browns for 5-6min. Add onion and garlic and stir to combine until beef has browned and onions are becoming translucent. Add spices/herbs and cook until fragrant about 1-2min. Add tomato sauce, stock, brown sugar, vinegar, and pinch of salt. Stir, bring to a simmer, then reduce heat to low. Continue to cook for about 20min or until liquid has reduced and there’s no excess liquid left. Taste for seasoning. Add a bit more salt, brown, sugar and cider vinegar if desired.

TACO PIZZA CRUST
▪175g or 1.5c all purpose flour
▪5g or 1tsp baking powder
▪3g or 1tsp instant yeast
▪3g or 1/2tsp salt
▪50g or 1/2c instant masa flour
▪35g or 2.5Tbsp olive oil
▪140g or 2/3c warm water (86F/30C)
Add dry ingredients and olive oil to a food processor and spin, streaming in water until water is incorporated and begins to form a ball. Transfer to work surface and knead by hand for about 2min. You can also mix by hand or with a mixer if you don’t have a blender.
Cut dough ball into 2 equal pieces (about 200g each). Roll each into ball as shown @ 4:15. Cover well and allow to proof at room temp for 30min.
Press and roll out dough as shown @7:00 into 11-12”/30cm rounds.

▪425g/15oz tomato sauce
▪20g 1 1/4Tbsp tomato paste
▪40g chipotle chiles in adobo (about 2 chiles)
▪10g or 1 1/4Tbsp chile powder
▪2g or 1tsp cumin
▪1g or 1/2tsp garlic powder
▪1g or 1/2tsp onion powder
▪1g or 1tsp oregano
▪15g or 1 1/4Tbsp brown sugar
▪5g or 1tsp salt
Add ingredients to a high sided container and spin with an immersion blender until incorporated.

BUILDING & BAKING THE PIZZA
▪Block of mild cheddar, shredded
▪Block of pepper jack, shredded
▪Fresh tomato, medium diced
▪Green onions (middle section only, diced)
▪Pickled jalapenos, diced
▪Sliced black olives
Spread 3 spoonfuls of sauce onto crust, edge to edge. Follow with a generous amount of the shredded cheeses, the ground beef taco meat, black olives, green onions, diced tomatoes, and chopped jalapenos.
Load pizza (with parchment underneath unless you’re a complete pizza jedi) onto preheated 550F/290c oven with pizza steel or stone for 6-8min. Remove parchment from pizza after about 6min and allow to cook directly on steel for another 1-2min.

If you’re looking for something healthier, swap the sour cream for some plain Greek yogurt. Other than that, you can also customize your own toppings according to your own preference! Make this Mexican Pizza today!
Ingredients
½ lb ground beef ????
2½ tbsp taco seasoning mix
6 inch flour tortilla ????
8 oz canned refried beans
1 cup shredded cheddar cheese ????
2 tomatoes, chopped ????
½ avocado, diced ????
1 can jalapeño
4 tbsp sour cream
Green onions
Black olives
Olive oil
⬇️ How to make Mexican Pizza ⬇️
0:09 In a pan, sauté ground beef.
0:15 Add taco seasoning mix, and continue to sauté until caramelized.
0:21 On the flour tortilla, brush olive oil on both sides.
0:29 Bake the tortilla for 7 minutes.
0:32 Spread a layer of refried beans on the tortilla.
0:40 Above the beans, spread a layer of beef.
0:48 Add cheddar cheese above the beef.
0:53 Bake for 10 minutes.
0:57 Add tomatoes, avocado, jalapeño, olives, sour cream, and green onions on the pizza.

2 lbs ground beef, I used 97% lean 3% fat
1 Roma tomato
1/2 white onion
1 tsp cumin
1 tsp onion powder
1 tsp paprika
1 tsp chili powder
1 tsp cayenne pepper
1 tsp oregano
2 tsp garlic salt
1 tbsp cornstarch
Sauce:
15 oz tomato sauce
3/4 c water
2 tbsp vinegar
1/2 tsp sugar
1 tbsp minced onion or 1/4
1/4 tsp oregano
1/2 tsp cumin
1 tsp garlic powder
2 tsp garlic salt
1/2 tsp onion powder
2 tsp chili powder
1 tsp paprika
1 tsp cayenne
