Gary has won his share of Chili Cookoffs, so this is worth the watch! Even if you have your favorite chili recipe, check this out for a few tips you may not be familiar with. Great cold weather or anytime recipe!
Ingredients:
3 lbs ground beef, drained
1/2 cup red wine vinegar
One Large Bell Pepper finely diced
One Onion finely diced. Both sautéed until soft, Salting vegetables
1 30 oz. can Chili Beans
2 Cans diced tomatoes
1 can drained Kidney Beans
About 32 oz. Tomato Juice
Carroll Shelby Chili Kit (contains chili pepper, cumin, garlic and other spices)
Use the cayenne pepper packet if you like your chili hotter. The masa flour packet is to thicken your chili. All personal preferences.

Making homemade pork n beans pie ;)
The fruit pie is delish, I use 4 cups of frozen mixed fruit, and 1 cup of chopped peeled apples, 1 and a half cups white sugar, 3 tbsps. white flour, all mixed together. For pie crust, I use 2 and 2/3 cups white flour, 1 cup margarine, 2 tbsps. white sugar, and 1/3 cup cold water, all mixed. I separate the dough into 2 halves, and roll out bottom, add fruit, roll out top, cover and crimp edges together. I bake at 325 o F for 30 to 40 minutes. - For the pink beans, I used 1 cup of pink beans, washed and soaked in a large pot of water overnight, or 10 hours, drained, and put into large pot and added 3 cups cold water, 1/2 lb. lean ground pork, 1/2 small can tomato paste, 1/4 cup maple syrup, a tsp. of salt, and simmer all for 4 hours, added 2 cups more water as it cooks out, about 3 or 4 times. Makes a very delicious dishes.

Ingredients
9oz of cornbeef
1 medium size onion (chopped)
3 cups of all purpose flour
3 butter sticks
Pinch of nutmeg
1/2 tbsp of salt
3 tsp of milk
1 egg
Lamb Chops with Rosemary Gravy (loin chops, forequarter, cutlets)
Next level lamb chops - infuse with flavour with a rosemary garlic lamb chop marinade, sear aggressively to create a thick crust, then smother in rosemary gravy. You will lick the plate clean, do the happy dance and wonder why you don't cook lamb chops more often!
Use this recipe for lamb loin chops, forequarter chops, cutlets (rib chops) or lamb leg steaks.
TRADITIONAL STEAK PIE RECIPE: EASY STEAK & SAUSAGE PIE HOGMANY / NEW YEAR DINNER
Ingredients
- rapeseed oil
- 2 x sticks celery
- 2 x carrots
- 1 x onion
- 500g cubed beef
- 4 x pork link sausages
- 2 x tsp mixed herbs
- 2 x tsp Dijon mustard
- 1 x tbsp Worcestershire sauce
- 1 x tbsp plain flour
- 2 x beef stock cubes (in 2L water)
- 40g bisto gravy granules (optional)
- 1 x egg
- 2 x ready roll puff pastry sheet
Method
1. Line pie dish with pre rolled puff pastry and cut a lid for the pie - place this in the fridge
2. Brown meat (beef & sausages) in large casserole dish with oil - seasoned with salt & pepper
3. Once browned, remove the meat from the dish and deglaze with the Worcestershire sauce
4. Add diced veg (carrot, onion, celery), mixed herbs & mustard and cook - add a little more oil if necessary - until softened
5. Add flour and mix through
6. Then add meat back into the dish & pour over the beef stock
7. Place lid on the dish and cook on medium/high heat for approx 1 hour then low/medium heat for a further 30mins (you can also cook in the oven at 200 degrees for approx 2hrs - checking periodically after 1.5hrs)
8. Remove meat & sausages from gravy before stirring through gravy granules (if desired) and then add the meat back in
9. Egg wash inside of pastry in pie dish and stick in oven for 2mins in oven preheated to 200 degrees then remove from oven
10. Spoon pie mixture into your pie dish, seal the lid on top with a fork, poke a couple of holes in the top and egg wash
11. Cook in oven at 200 degrees for 20mins
