Creamy baked fish on potato gratin
This is a one-pan meal with fish baked on top of a potato gratin in a creamy sauce with a golden crunchy topping. It's a cross between a casserole, gratin and a pie. This is a fabulous cosy, rustic oven baked fish recipe that's effortless yet company worthy!

Creamy baked fish on potato gratin - easy, cosy deliciousness
4 x 160g/5oz white fish fillets, ~2cm / 0.8 thick, skinless (barramundi, snapper, bass, tilapia, cod) – sprinkled with 1/2 tsp salt & 1/4 tsp black pepper
POTATO GRATIN:
3 tbsp (50g) unsalted butter
2 large leeks white and pale green part only, washed, cut in half lengthways, sliced 5mm / 0.2 thick OR 2 large onions
3 garlic cloves, minced
2 medium starchy potatoes (250g/8oz each), peeled, cut into quarters then sliced 4mm / 1/6 thick.
3/4 tsp salt, 1/2 tsp black pepper
1/2 cup dry white wine, any type (sub more veg stock)
1/2 cup vegetable stock/broth, low sodium
1 cup thickened/heavy cream
CRUNCHY TOPPING – mix: 3/4 cup panko breadcrumbs, 2 tbsp extra virgin olive oil, 1/4 cup parmesan finely shredded
1. Melt butter in large 30cm/12” skillet over medium high. Cook leek & garlic 3 min. Cook potatoes, salt + pepper 6 min until they become a bit translucent (still firm but semi-cooked). Turn up to high, add wine, reduce by 75%. Add stock, reduce by half.
2. Turn stove off, place fish on top, pour cream all over. Sprinkle with breadcrumbs, bake 180°C/350°F (160°C fan) for 30 min (the fish will be succulent!!!) then grill/broil on highest shelf on high for 4 min to make the top golden.

Ingredients you'll need:
• 1 - 16oz Can Salmon, Drained & Flaked (I USED 3 - 5oz Packets Skinless/Boneless Salmon)
• 4 - Small/Medium Potatoes (Peeled & Thinly Sliced)
• 1 - Onion (Chopped)
• 1 - 10 1/4 oz Can Cream Of Mushroom Soup
• 1/4 Cup Water
• 3 tbs Flour
• Salt & Pepper (Use As Much Or As Little As Desired)
• Nutmeg (Optional)
Instructions:
• Place half of the potatoes in a greased Crock-Pot
• Sprinkle with half the flour, salt & pepper
• Cover with half the salmon
• Cover with half the onions
• Repeat layers
• Combine the soup and the water
• Pour over the potato-salmon mixture
• Dust with nutmeg (Optional)
• Cover and cook on high for 4 hours or low for 6-10 hours

Salmon & Potato Gratin
Salmon & Leek Gratin
Ingredients
2 Leeks
200g Smoked bacon, chopped
Glug Olive Oil
1 clove garlic, peeled
Knob of butter, plus extra for greasing tin
1kg Potatoes, Peeled and thinly sliced
250g salmon fillet, skinless, chopped in 2cm chunks
450ml cream (Double, single or half cream & half milk)
2 - 3 tablespoons parmesan, grated
Salt & Pepper
Method
1. Heat oven to 180C/ 160C fan. Slice the leeks into thin slices and wash thoroughly, to remove any dirt. Heat the oil and butter in a large pan over a medium heat. Add the leeks and chopped bacon to the pan and cook for a few minutes until the leeks become soft and tender. Using a fine grater, mince the garlic into the pan and continue to cook for a couple more minutes.
2. Grease a suitably sized oven proof dish. Line the base of the dish with a third of the sliced potatoes. Spoon half of the softened leek and bacon mixture on top along with half the salmon. Layer with another layer of potato and repeat the leek, bacon and salmon layer and add a final layer of potato.
3. To the pan you cooked the leaks in. Heat the cream until almost boiling point. Season well with salt and pepper. Carefully pour the hot cream over the gratin. Sprinkle the parmesan over. Cover with foil and place in the oven. Cook for 60 minutes covered with foil, then carefully remove the foil and cook for a further 30 minutes until bubbling and blistered on top. Potatoes should be tender when pierced with a knife. Allow to stand for 10 minutes before eating.
