How To make Cucumber Rounds with Smoked Salmon Mousse
8 oz Cream cheese, at room temp.
2 oz Smoked salmon
dr Lemon juice (few drops) 3 tb Heavy cream
White pepper to taste 2 Seedless English cucumbers
Garnish watercress leaf(opt) From Daniel's Restaurant. (Makes approximately 40 hor d'oeuvres) Combine the mousse ingredients in the bowl of food processor and blend until the mixture is smooth. Chill at least 30 minutes. Cut each cucumber crosswise into approximately 20 slices, each slightly less than 1/4" thick. Cucumbers can also be peeled, striated with fork tines or cut into decorative shapes with biscuit cutters. Assemble hor d'oeuvres no more than an hour before serving by softening the mousse with a wooden spoon and putting it in a pastry bag with a leaf tip. Pipe mousse on top of each cucumber slice and garnish with a small watercress leaf. NOTE: If you prefer, you can slice the cucumbers a bit thicker than 1/4" and make a small hollow for the filling in the center of the
slice with a melon-ball scoop.

Ingredients
▢6 ounces room temperature cream cheese
▢2 tablespoons plain low fat greek yogurt, I used Stonyfield
▢3 tablespoons chopped chives
▢6 ounces smoked salmon
▢1/2 english cucumber sliced thin
▢1/4 red onion, sliced thin
▢1 plum tomato, seeded and diced
▢12 slices cocktail pumpernickel bread
▢Kosher salt and fresh ground pepper
▢chopped chives for garnish
Instructions
In a medium bowl, beat the cream cheese and yogurt until light and fluffy. Using a rubber spatula, gently fold in the chopped chives.
Spread a teaspoon of the cream cheese mixture onto each slice of bread and then divide the salmon among them topping each with a sliver. Top each canapé with cucumber, red onion and tomatoes. Season with a little bit of kosher salt and pepper. Garnish with the remaining chives. Serve immediately.
Note: The cream cheese mixture can be made up to 24 hours in advance and stored in an airtight container refrigerated.

Smoked salmon slices 400g
Fish or chicken stock 160g
Double cream 80g
Gelatine leaves 2

Smoked Salmon Cucumber Bites
I could live off of appetizers. I don't know how my doctor would feel about that or any dietician but I just love grazing on snacks. And 'tis the season for loads of appetizers. Today I'm sharing another super simple one that's a big hit. Smoked salmon cucumber bites!
What you need:
8 oz of cream cheese (I use cream cheese spread so there's no need to soften)
1 tbs of horseradish
1 tbs of heavy cream
3 tbs of dried dill (or fresh works great!)
8 oz of smoked salmon
2 cucumbers, peeled and sliced
What you do:
Mix the cream cheese, horseradish, cream and dill in a bowl
Spread a small spoonful on each cucumber slice and top with smoked salmon add some fresh cracked black pepper and serve with small appetizer forks or toothpicks.
