How To make Salmon Broccoli Casserole
1 can (7 1/2 oz.) canned salmon 1 pkg. (10 oz.) frozen chopped broccoli 1/3 c. chopped onion 1 tbsp. butter 1 can cream of celery soup, undiluted 2 tbsp. lemon juice 1 egg, beaten 1/4 c. grated Parmesan cheese 1/2 tsp. dried dill weed 1/8 tsp. pepper 1 1/2 c. seasoned croutons or 1 c. dried bread crumbs 1 can (8 oz.) mushrooms, drained
Drain salmon, reserving liquid. Remove skin and bones. Break into chunks; set aside. Cook broccoli according to directions on package and drain. Saute onion in butter, add soup, heat thoroughly. Stir in lemon juice, egg, cheese, dill weed, pepper, mushrooms and reserved salmon liquid. Blend in salmon, broccoli and croutons; place in a greased shallow baking dish. Bake at 325 for 20 minutes.

Ingredients:
4 Potato - medium to large
Florets of 1 whole broccoli
125 grams Fillet of salmon
Cherry tomatoes to your liking
Grated cheese as much as you like
My Bechamel sauce:
4 tbsp Butter - unsalted
3 tbsp All purpose flour
150-200 ml Cooking creme (both vegan and dairy work well)
Fresh dill, chopped, a handful
Dried rosemary, a pinch
1 tsp Garlic granules
¼ tsp Black pepper
¼ tsp Ground nutmeg
½ tsp Salt
Any cooking liquid to adjust consistency in the end
Broccoli Salmon Casserole or Baked Veggies recipe
1. Mise en plus: clean and cut all the veggies, cook potato and broccoli halfway to make sure the casserole cooked evenly in the oven later. Dice salmon into smaller pieces.
2. Make Bechamel sauce: (Roux) melt butter on the pot, turn off heat and add flour, stir well. Season the Roux with garlic granules, dried rosemary. Turn on stove to medium heat, add cooking creme slowly and stir until no lumps are left. Stir well and cook until it boils, add fresh dill, nutmeg, and blackpepper. Adjust consistency (use milk, veggie/chicken stock, or water) until it resembles the consistency of gravy. Simmer for few minutes and season with salt just before turning off heat.
3. Assemble the layers from bottom to top:
a. Half cooked Potato
b. Bechamel sauce
c. Salmon
d. Half cooked Broccoli
e. Cherry tomatoes
f. Bechamel sauce
g. Grated cheese
