How To make Roquefort Mousse
Jim Vorheis 1/2 lb Roquefort cheese
4 tb Butter
4 oz Cream cheese
1 Egg, separated
1 tb Unflavored gelatin
1/2 ts Dijon mustard
1/2 c Whipping cream
Have cheese and butter at room temperature. Whip cream and set aside. Beat egg white until stiff and set aside. In a large bowl beat egg yolk. Add Roquefort and beat until smooth. Add cream cheese and butter and beat until smooth. Dissolve gelatin in cold water, then place dish of gelatin in hot water and stir until gelatin is dissolved. Add gelatin and mustard to cheese mixture. Fold in egg white, then fold in whipped cream. Pour into greased mold. Chill. Serve with crackers or fruit. Blue Cheese Mousse with Ripened Pears
A delightfully simple, yet sophisticated appetizer, featuring Philadelphia Cream Cheese, blue cheese and sweet ripened pears.
Blue Cheese Mousse on Shortbread - Delight Of The Bite
This crazy combination is utterly outstanding! Crisp, light and buttery shortbread cookies topped with tangy, sharp and creamy blue cheese. The perfect party bite to go with a big, bold red wine. I was lucky enough to pair these tasty bites with a delicious wine -- a 2015 Beringer Knights Valley Cabernet Sauvignon -- YUM! And if you are lucky enough to have any cookies leftover, they are great all on their own. The shortbread can be made ahead and freezes well too. The blue cheese mousse can be made up to a day ahead and stores great in a sealed piping bag (or mock zip-lock piping bag). Just snip off the bottom corner when you're ready to top the shortbread. Super easy!
RECIPE:
2 c flour
1/2 tsp salt
1 c butter - softened
2/3 c powdered sugar (for just a regular cookie, use 3/4 c powdered sugar)
1 tsp vanilla
*Cream butter with the powdered sugar until light and fluffy and add vanilla. At low speed add teh flour and salt and combine until just mixed together. Turn out onto a piece of plastic wrap and shape into a round, flat disc. Chill in fridge for about 20 minutes. Roll dough out onto a clean, floured surface -- about 1/4 inch thick. Cut into desired shapes. For this recipe, a smaller bite-sized cookie cutter works well.
*Bake on ungreased cookie sheet at 300 degrees for 20-24 minutes...checking for the edges to just begin to look golden. Cool on a cooling rack. Use, store (in an airtight container) or freeze cookies.
For the Mousse:
In a food processor (or mixer or by hand) take about 4oz (1/2 cup) of good blue cheese and mix to begin to soften the cheese. Add a few dashes of worcestershire sauce, 1 T dried chives, and 1/4 tsp black pepper. Slowly add in 1/4 cup (or more) of heavy cream. Mix this all very well until light and fluffy. You're looking for a consistency of a very thick yogurt. Cheese will take on a blueish appearance. Chill for at least 30 minutes before using. Store in an airtight container or piping bag, to top cookies later. YUM!
