Ingredients
1 cup rolled oats
1 1/3 cups boiling water or milk
1/3 cup maple syrup
2 tablespoons melted butter
2 teaspoons yeast
1 teaspoon salt
3 teaspoons vanilla
3 cups freshly milled flour: hard red, hard white, spelt, kamut, or Einkorn

Mix and let cool slightly.
Add flour yeast, salt, yeast and vanilla. Mix until dough forms. Knead the dough for 7-8 minutes.

Gently deflate the dough, shape it into a log. Place the log ino a lightly greased 9 x 5 loaf pan. Make 1 inch slits into the dough and then goat with water, milk or egg white. This will help adhere the oats sprinkled on top.
