Here's a perfect pot roast recipe you can cook on the stove top that is super simple and tastes fantastic. My mama likes a boneless chuck roast and prefers a beef bouillon paste for seasoning the roast, but any seasoning rub will work. Throw your chuck roast in a pot on the stove and it practically cooks itself. If you've ever wondered how to cook the perfect pot roast, look no farther

What you need for this Pot Roast Recipe

SEASONING RUB
How to Cook a Perfect Pot Roast on the Stove Top
Buy a roast with some fat in it. Marbling in the meat adds flavor and juiciness; the thinner and richer the marbling, the better.
For a stove top roast preparation, use a pot with a tight fitting lid and a heavy bottom.
Season the roast generously with salt, pepper, and whatever seasonings you like. A beef bouillon paste like my mama uses in the video is delicious.
Place the pot on the stove with just a few spoonfuls of water in the bottom and add the roast.
Lightly brown the roast on high heat for a few minutes.
Reduce the heat down to low, and cover the pot with a lid.
Check the roast periodically.
The beef will release it's flavors and cook in it's own juices.
Once the roast cooks out it's juices, it will begin to reduce.
About an hour into cooking, turn the roast.
Continue cooking until the roast cooks down to it's grease and drippings.
Remove the lid, raise the heat to medium, and brown the meat a final time in it's grease.
Remove meat from the pot.
Want Gravy?
To make beef gravy from the drippings, add a bit of flour and mix well over medium heat. Stir for about
1 minute until the flour and fat are well incorporated and the flour gets a bit of color. Raise the temperature and stir in broth or water and continue
stirring until the mixture begins to boil and thicken, and extra salt and seasoning as desired and pour into a gravy bowl.

GET THE RECIPE:
5 pounds any combination of chuck, rump & shank
8 oz pork belly or bacon
1 onion sliced
2 cups red wine - enough to cover the meat
(you could use 1/2 wine & 1/2 stock)
1 head of garlic
4 bay leaves
1/2 tbsp black pepper
1 tbsp allspice
1/2 tbsp cloves
3 tbsp tomato paste
1/3- 1/2 tsp salt per pound of meat (for 5# meat
add about 2-2.5 tsp salt)
1. Cut the meat into about 8 to 12 ounce pieces. (so you can layer the pieces in the pot)
2. Salt the meat about 1/3- 1/2 tsp per pound.
3. In a 5-6 quart (liter) roasting oven safe pot. Layer the meat, pork belly, spices, tomato paste and onions.
4. In a 350°F (177°C) bake for about 4 to 6 hours) when done, you should easily be able to pull apart the meat with just two forks. (the meat will be tender after 4 hours, from 4-6 hours it will be more tender/ pull apart easier- closer to 6 hours shredable like pulled pork) Cook it to your desired preference.
5. You could easily make this dish a few days ahead of time. Serve with potatoes, rice, or bread.

Roasted chicken with mushrooms is such a comfort food for me. Cooking it in a clay pot makes for a fantastic flavor and moist, tender chicken.
Serves 4
Rice
225 g (1 cup) long grain rice, such as jasmine or basmati
250 mL (1 cup) chicken stock
10 g (1 ½ Tbsp) peeled and finely julienned fresh ginger
2 green onions sliced
1 kg (2.2 lbs) fresh chicken, cut into large pieces (bone-in)
45 mL (3 Tbsp) soy sauce
15 g (1 Tbsp) granulated sugar
15 mL (1 Tbsp) oyster sauce
10 mL (2 tsp) sesame oil
2 cloves garlic, minced
black pepper
15 g (1 Tbsp) butter
225 g (1/2 lb) gourmet fresh mushrooms, sliced
Directions
1. Preheat the oven to 190 °C (375 °F). If using a claypot, soak it in water for an hour before using.
2. Stir the rice, stock, ginger and green onion in the claypot. Top this with the chicken pieces in an even layer.
3. Whisk the soy sauce, sugar, oyster sauce, sesame oil, garlic and black pepper together and set aside. Heat a sauté pan over medium-high heat and add the butter. Add the mushrooms and sauté until they are tender, 5 to 7 minutes. Add the soy sauce mixture and immediately remove the pan from the heat. Spoon the mushrooms and the liquid over the chicken. Cover the claypot and bake for 60-75 minutes, until the chicken is cooked through. Serve immediately.
