coarsely ground Heat oven to 500*. With a sharp, pointed knife make inch-deep incisions all over roast; insert garlic slivers in slits so that they disappear into the meat. Sprinkle meat all over with the pepper and place fat side up in a roasting pan. Roast meat, allowing 7 minutes per pound for medium-rare. Turn off heat and leave roast in oven 2 hours longer WITHOUT OPENING OVEN DOOR. Finished roast will be brown and crisp on the outside and pink throughout the inside. Serve warm or chill several hours. Cut in very thin slices to serve.

Ingredients: -Sabut kali mirch (Black peppercorns) 2 tbs -Beef steak undercut 400g (200g each) -Worcestershire sauce 1 tbs -Namak (Salt) ½ tsp or to taste -Dried thyme ½ tsp -Cooking oil 2 tbs -Butter 1 tbs -Butter 2 tbs -Lehsan (Garlic) crushed ½ tsp -Maida (All-purpose flour) 1 tbs -Yakhni (Stock) ½ Cup -Pakola Full Cream Milk 1 Cup -Worcestershire sauce 2 tsp -Namak (Salt) ½ tsp or to taste -Cooking oil ½ tbs -Butter ½ tbs -Yellow bell pepper julienne ½ Cup -Red bell pepper julienne ½ Cup -Shimla mirch (Capsicum) julienne ½ Cup -Pyaz (Onion) sliced ½ Cup -Namak (Salt) to taste -Makhan (Butter) 1 tsp
Directions: -In frying pan,add black peppercorns and dry roast until fragrant. -Let it cool. -In mortal & pestle,add roasted black peppercorns,crush coarsely & set aside. -In a bowl,add beef steak,worcestershire sauce,salt,dried thyme,black pepper crushed (2 tsp) and mix well,cover & marinate for 30 minutes. -Heat cast iron pan,add cooking oil,butter and let it melt. -Add marinated beef steak and cook from both sides until done (6-8 minutes each side). -On the same frying pan,add butter and let it melt. -Add garlic and mix well. -Add all-purpose flour,mix well and cook for a minute. -Add 1 tbs black pepper crushed (reserve remaining for later use) and mix well. -Add stock,milk and whisk well. -Add worcestershire sauce,salt and mix well,cook until sauce is thick,whisk continuously & set aside. -In a wok,add cooking oil,butter and let it melt. -Add yellow bell pepper,red bell pepper,capsicum,onion,remaining black pepper crushed,salt and stir fry for a minute. -Heat sizzler pan,add butter and let it melt. -Add stir fried vegetables,beef steak and peppercorn sauce & serve!

Mutton Pepper Roast Serves 4-5 Recipe in English:
Ingredients: -Pani (Water) 2 Cups or as required -Namak (Salt) ½ tsp or to taste -Haldee powder (Turmeric powder) ½ tsp -Mutton mix boti ½ kg -Sabut dhania (Coriander seeds) 1 tbs -Zeera (Cumin seeds) ½ tbs -Sabut kali mirch (Black peppercorns) 1 tsp -Saunf (Fennel seeds) ½ tsp -Laung (Cloves) 4-5 -Darchini (Cinnamon stick) 1 -Badi elaichi (Black cardamom) 1 -Adrak (Ginger) 1 inch piece -Lehsan (Garlic) 4-5 cloves -Pyaz (Onion) fried 1/4 Cup -Pani (Water) 1-2 tbs -Rafhan corn oil 1/4 Cup -Kary pata (Curry leaves) 10-15 -Dahi (Yogurt) 1/4 Cup -Lal mirch powder (Red chili powder) 1 tsp or to taste -Namak (Salt) ½ tsp or to taste
Directions: -In pressure cooker,add water,salt,turmeric powder and mix. -Add mutton mix boti,mix well and bring it to boil. -Cover and pressure cook on medium flame until tender (approx. 20-25 minutes). -In frying pan,add coriander seeds,cumin seeds,black peppercorns,fennel seeds,cloves,cinnamon stick, black cardamom and dry roast until fragrant. -Let it cool down. -In spice mixer,add roasted spices and grind well. -Add ginger,garlic,fried onion,water and grind to make a paste & set aside. -In wok,add rafhan corn oil,curry leaves,grinded onion & spices mixture,mix well and cook for 2-3 minutes. -Add yogurt and mix well. -Add red chili powder,salt,mix well and cook for 6-8 minutes. -Now add cooked mutton and mix well,cover and cook on low flame for 5-6 minutes & serve!

Make the Perfect Roast Beef with Garlic Gravy - Guaranteed to be a HIT at your next dinner party!
I love a Sunday roast of beef, but I have to have it perfectly done. I've gone through many methods of cooking roasts, but this has to been one of the best fail proof methods I've ever come across. It works perfectly every time.
In this video we show how to cook this perfect roast beef done to medium rare. The process is straight forward, simple, and fair proof. First, seasoning the beef, on all sides, with a combination of of spices such as thyme, rosemary, garlic, salt, and pepper. Then, coat the roast with olive and then rub the spices into all sides. Another note is to make sure the meat be at room temperature, so I leave mine out for about 4 to 6 hours.
Next, place the vegetables of your choice into the bottom of the roasting pan. The roast is placed on the top baking tray. Put the roast and vegetables into a 500 degree F or 260 degrees C preheated oven for 5 minutes per pound. My roast was about 2.2 pounds, so I left it about 13 minutes or so. After about 13 minutes, the heat is turned off and the roast is left in the oven to bake for 15 minutes per pound. It is very important not to open the oven door at all. In the case of this roast, I left it for 35 - 40 minutes, pulled it out, and allowed it to rest for an additional 15 minutes.
