How To make Beef Pot Roast Tex Mex Style
-JUDI M. PHELPS 4 To 5 lb beef bottom roast;
-boneless, trimmed of fat 2 tb Worcestershire sauce
2 tb Lime or lemon juice
1 tb Prepared mustard
2 Cloves garlic; minced
6 oz Can spicy tomato juice
1/2 c Chili sauce
1 To 2 jalapeno peppers;
-finely chopped 2 tb Fresh cilantro or parsley;
-finely chopped 2 ts Cumin seeds
Put meat in shallow plastic dish just large enough to hold it. Combine Worcestershire, lime or lemon juice, mustard, garlic. Spread mixture over meat. Cover and refrigerate overnight. Roast meat in preheated 325 degree oven for 1 hour. Combine remaining ingredients; pour over meat. Cover and roast 3 to 4 hours more at 275 degrees until meat is very tender. Baste occasionally with pan juices (thin with a little boiling water if necessary) Slice thinly to serve. Makes about 6 to 8 servings. Approximately 200 calories per 3-1/2 oz. serving. Ingredients:
For the enchiladas
Whit corn tortillas
Oil for frying
Medium cheddar cheese
For the beef chili gravy sauce
1/2 onion;small diced
2 minced garlic cloves
1 lb ground beef (80/20)
2 tsp ground cumin
2 tsp oregano
2 tsp black pepper
Salt to taste I used 1 1/2 tsp
3 1/2 unsalted beef broth
2 tbsp tomato paste
3 tbsp New Mexico chili powder
1 1/2 tsp paprika
1 1/2 tsp cayanne pepper
4 tbsp APF (all purpose flour)

????Easy Flour tortillas recipe -
Ingredients
3 Pound of chuck beef
1/4 onion
3 garlic cloves
2 small bay leaves
1 tsp Mexican oregano
1 tsp black pepper
1 tsp salt
2 chiles guajillos
Pressure cook for 30 mins (slow release)
*save 1/2 cup of broth
1/2 large onion
2 roma tomatoes
2 Anaheim peppers
1/2 Tbsp oil
Adjust salt to taste - 1 tsp salt + 1 tsp black pepper
Serve with Mexican rice, beans, flour tortillas, lettuce, tomato, and lime

This Carne Guisada is so tender and flavorful! Diced beef chuck roast in gravy comes together to make a delicious guisada. This works great in tortillas served as tacos or paired with rice and beans for a complete dinner. YUM!!!!!

Ingredients:
2 1/2 - 3 lbs of beef chuck roast diced into 1-inch pieces
1/2 tsp pink Himalayan salt ( use less if you are using fine salt)
1/4 tsp black pepper
1 tbsp olive oil
1/2 cup diced onion
1/4 cup of bell pepper
2 cloves of minced garlic
4 tbsp of flour
3 tbsp tomato sauce
3 cups hot water
2 tsp beef bouillon powder or 2 tsp better than bouillon beef base
1 tsp ground cumin
1. In a hot skillet over medium heat, add the olive oil. Next, add the diced beef. The beef will start to produce liquid. Simmer on medium heat and occasionally stir for 15 minutes or until most of the juice has evaporated.
2. Add the onion, bell pepper, and garlic and saute for 5 minutes or until the veggies have softened.
3. Sprinkle the flour over the beef and saute for another 2 minutes.
4. Add the tomato sauce and stir to combine. The sauce should start to brown. Add 3 cups of water. It will sizzle! Next, add the beef bouillon and cumin. Stir everything around making sure to scrape the bottom of the pan. Bring to a boil. Once the guisada starts to boil, set heat to low and reduce to a gentle simmer. The gravy will thicken as it cooks. Simmer for 2 1/2 to 3 hours. Add 1 tbsp or 2 of water if the sauce thickens too much while simmering.
5. That's It!! Enjoy with your favorite tortillas and serve with some rice and beans!!

Ingredients:
3 lbs Beef Chuck Roast
6 Potatoes Cut In Half
4 Large Carrots
1 Cup of Spanish Olives
1/2 Onion
1 Can Diced Tomatoes
1 Can Hot Tomato Sauce EL PATO
Salt and Pepper
1 tsp Oregano
1 tsp Granulated Garlic
1/2 Cup of Water
To make it in a Crockpot:
Add all of the ingredients above, but just add 4 cups of water. You cook it on high for 5-6 hours or on low for 8-10 hours.
