PEACH & PROSCIUTTO CROSTINI brings the flavours of summertime to your next party!
This is one of those casual party snacks or appetizers I often prepare soon after guests arrive. I love assembling these PEACH & PROSCIUTTO CROSTINI with guests looking on, seeing their excitement at how simple they are to make. I always get a kick out of the “Oh, I am so making this!” I hear each and every time.

Here’s how I like to make these PEACH & PROSCIUTTO CROSTINI:
PROSCIUTTO
The saltiness of this thinly sliced, smoked Italian ham pairs perfectly with the cheese and peach. I’ve listed about 12 slices for this recipe, which translates to about 200 grams. You can also omit the meat altogether if you’d rather enjoy a vegetarian version; it will still taste wonderful.
PEACHES
Look for those perfectly ripened freestone peaches, preferably grown locally. Nice thing about using them for this recipe is that if you have leftovers, you can always make a PEACH PIE or our PEACH COBBLER! We’ll leave that decision up to you.
RICOTTA
Ricotta is a light, whipped Italian cheese often used in layered pasta dishes. It’s also popular as a spreadable and acts as a creamy base on top of the baguette before we layer on the other flavours.
GENERAL ASSEMBLY
Don’t overthink it. Toast or grill up the slices of baguette and spread the ricotta on them. Add a length of prosciutto and a small helping of the peaches tossed with the red onion. Think of the honey, balsamic, salt and pepper as the icing on the cake. It’s all quite amazing.

PEACH & PROSCIUTTO CROSTINI are a party favourite!
INGREDIENTS
1 French baguette, thinly sliced
½ cup ricotta cheese
12 slices prosciutto (about 200 g)
¼ red onion, thinly sliced
2 peaches, thinly sliced
1 tablespoon balsamic vinegar
1 tablespoon extra virgin olive oil
drizzle of honey
microgreens or fresh herbs
salt and pepper to taste
INSTRUCTIONS
1. Place 12 slices of baguette onto a baking sheet. Transfer to a hot oven or grill to toast.
2. Place the sliced onions and peaches into a small bowl. Drizzle with oil and vinegar and lightly toss.
3. Place the toasted baguette out on your work surface. Spread a small dollop of ricotta cheese onto each. Attractively arrange a slice of prosciutto on top of the cheese. Add a spoonful of the peach and onion mixture. Drizzle with a bit of honey and garnish with microgreens or fresh herbs, salt, and pepper to taste.
