2 cups basmati rice 3 cups stock or water (add more salt if water) 4 chicken thighs 1 Tbsp olive oil
Seasonings: 1 tsp chili powder, paprika, garlic, onion 1/2 tsp rosemary, thyme, oregano Salt to taste
Cook the chicken thighs 1/2 way through, remove them and add the rice. Add your stock or liquid and re add the chicken. Adjust for salt at this time! Bring everything to a boil, cover and cook for 20 minutes or until chicken is cooked through!
Finishing touches: Chop everything as fine as you want!

For the Spicy Rice:
• 120g uncooked washed basmati rice • 1 diced white onion • 1 diced red bell pepper • 1 tsp salt & pepper • 1 tsp paprika • 1/2 tsp chilli powder • 1 tsp cumin • 1/2 tsp turmeric • 50g tomato paste • 250ml water or chicken stock
Garnish:
• Chopped coriander / cilantro • Peri Peri sauce (Optional)
Note: - You can marinate the chicken overnight for better flavour and cook the next day - You can cook the rice in a pot but for this recipe I prefer to cook it in a pan
