How To make Rhubarb Cake Dessert
1 yellow cake mix
4 Cups rhubarb -- finely chopped
1 1/2 Cups sugar
1 Cup whipping cream
Lightly grease a 9x13 cake pan.
Mix cake mix as on the package; add one stick of melted butter. Pour cake mix into the prepared pan. Pour rhubarb over the cake mix; pour sugar over the rhubarb. Slowly pour the cream over the sugar. Important, do not stir. Bake at 350 degrees for 1 hour or until rhubarb is tender and dessert is bubbling.
Top with whipped cream, if desired.

This recipe for homemade STRAWBERRY-RHUBARB CAKE was a last-minute addition to our content calendar. With warm weather entertaining on the way, our sights were set on dreaming up GRILL RECIPES, summer DESSERTS and assorted SIDE DISHES that put the abundant array of locally grown vegetables to good use. But then I literally saw the sign “Fresh Rhubarb” and couldn’t resist crafting something scrumptious.

Recipe:
3 cups brown sugar
1 1/3 cups veggie oil
2 eggs
2 tsps vanilla
5 cups flour
2 tsp salt
2 tsp baking soda
2 cups milk
4 cups finely chopped rhubarb
1 tsp almond extract
Topping: 1 cups sugar
2 TBSP butter
-Beat B. Sugar, oil, eggs, and vanilla until smooth
-Combine dry ingredients. Fold in alternately with milk.
-Add rhubarb and almond extract
-pour into greased 9 x 13 pan and sprinkle topping over the batter
-Bake at 350 degrees for 30-40 minutes.

Super Easy Rhubarb Cake Recipe
This cake is one of the easiest to make. It's super moist and strikes the perfect balance between tart and sweet. It can be enjoyed at room temperature or warmed up with a scoop of strawberry ice cream on top.
Ingredients
* 3 cups chopped rhubarb
* 1/4 cup sugar
* 1/2 tsp cinnamon, ground
* 1 cup sugar
* 1/2 tsp salt
* 1 tsp baking soda
* 2 cups flour
* 2 eggs
* 1 cup sour cream
* 1/4 cup unsalted butter, softened
* 1 cup sugar
* 1/4 cup flour
Peel and chop rhubarb. Measure out 3 cups and transfer into a medium bowl. Sprinkle rhubarb with 1/4 c sugar and 1/2 tsp cinnamon. Stir until rhubarb is well coated with spice.
In a large bowl, stir together 1 cup sugar, baking soda, salt and 2 cups flour. Stir in 2 lightly beaten eggs and sour cream and mix until smooth, then fold in the rhubarb mixture. Grease and flour a 13x9 (33x23cm) pan and pour in the cake batter. Spread the mix evenly with a spoon.
In a medium bowl, stir together the remaining 1 cup sugar, 1/4 cup flour and butter until the mixture is crumbly. Sprinkle the mixture on top of the cake. Bake at 350F (175C) for about 45 minutes.

Norwegian Rhubarb Cake Recipe
Do you have a bunch of rhubarb growing in your garden? Well, I do! So this tasty rhubarb cake recipe is no only great for all of the rhubarb I have in my garden but it is easy to make too! Plus, it is so nice to have a homemade cake in the kitchen.
♥ Ingredients ♥
-1/3 cup of flour
-1 cup of sugar
-2 large eggs
-1/3 cup of milk
-4 tablespoons of butter
-1/2 a teaspoon of cardamom
-1/2 teaspoon of baking powder
-pinch of salt
-8 ounces of rhubarb
-chopped almonds (optional)
-confectionary sugar (optional)
Pour mixture into a spring form pan buttered & floured
Preheat 350 F degrees. Bake for 35 minutes
I like to serve the rhubarb cake with some fresh whipped cream and a cup of coffee.
