How To make Reno Red
1 c Oil,cooking
3 lb Beef round,coarse grind
3 lb Beef chuck,coarse grind
Peppercorns,whole black 12 tb Red chile,mild,ground
6 tb Cumin
6 Garlic cloves
2 Onions
Water 6 Red chiles
3/4 c Chile caribe
1 tb Oregano,dried,pref. Mexican
2 tb Paprika
2 tb Cider vinegar
3 c Beef broth
4 oz Diced green chiles
4 oz Stewed tomatoes
1 ts Hot pepper sauce,liquid
2 tb Corn flour(masa harina)
1. Melt the suet or heat the cooking oil in a large heavy pot over
medium-high heat. Add the meat and the black pepper to taste, to the pot. Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned.~ 2. Stir in the ground chile, cumin, garlic, and onions. Add a small amount of water to barely cover. Bring to a boil, then lower the heat and simmer, uncovered, for 30 to 45 minutes, adding water as necessary.~ 3. Stir the crushed red chiles into the meat mixture. Brew the oregano like tea in 1/2 cup warm beer (room temperate). Strain the oregano-beer "tea" and stir the liquid into the pot. Discard the oregano. Stir in the paprika, vinegar, 2 cups of beef broth, diced chiles, tomatoes, and hot pepper sauce. Simmer, uncovered, for 30 to 45 minutes longer. Stir often.~ 4. Dissolve the masa flour in the remaining 1 cup of broth. Stir it into the pot and simmer, uncovered, 1/2 longer.~

Pork Asado, otherwise known as Asadong Baboy, is one of the most special recipes commonly prepared when we have festivities, parties, or even special occasions.
INGREDIENTS:
1 kilo Pork Pigue, cut into big chunks
1/4 cup Soy Sauce
4 Tbsp Liquid Seasoning
1/4 cup Lemon Juice or Calamansi Juice
1 Tsp Black Pepper
1 Tbsp Garlic, chopped
1 medium Onion, chopped
Bay Leaves
2 Tbsp Tomato Paste
2 cups Water
1 small can Liver Spread
1/2 cup Cheese
1 Tbsp Brown Sugar (or add more)

Best Beef Caldereta Recipe
A rich and flavorful stew with chunks of tender beef and hearty vegetables in tomato sauce. It's a one-pot meal that is filling and delicious!
What is Beef Kaldereta or Caldereta? It is a classic Filipino stew, like Kare-Kare, with Spanish influences where beef is simmered in stock or broth and tomato sauce until fork-tender and vegetables like potatoes, carrots, and bell peppers are added toward the end of cooking. It is similarly prepared to other Filipino favorites Afritada and Mechado. Kaldereta recipes are often cooked with goat meat, but different variations can be made with beef, chicken, or pork. It also includes mashed liver or canned liver spread for more flavor and helps thicken the sauce. Cheese is also a common addition making the sauce even richer.
Equipment
4.5-quart Dutch oven or a heavy-bottomed pot
Ingredients
3 pounds beef chuck cut into 1½ cubes (see note)
12 ounces Yukon gold or waxy potatoes cut into 1¼ chunks
12 ounces carrots cut into 1¼ chunks
½ red bell pepper cut into 1¼ chunks
½ green bell pepper cut into 1¼ chunks
4 cloves garlic minced
1 medium onion chopped
¼ teaspoon crushed red pepper
1 (28-ounce) can tomato sauce
1 teaspoon chicken/beef base or bouillon dissolved in 1 cup of water
3 bay leaves dried or fresh
1 tablespoon fish sauce sub: soy sauce
2 tablespoons sugar or more
½ cup sweet pickles or gherkins cut in half; if big
½ cup pitted green olives (Manzanilla or Castelvetrano olives)
¼ cup liver spread
Salt and pepper to taste
Neutral oil for searing and sautéing
Instructions
1. Season meat with salt and pepper. Sear them over medium-high heat for about 2 minutes on each side. Add oil as needed. Set aside.
2. Lightly sear potatoes, carrots, and bell peppers. Set aside
3. Sauté garlic and onions for about a minute until softened.
4. Add crushed red pepper and toast for 30 seconds.
5. Add meat, tomato sauce, and chicken base dissolved in a cup of hot water. Mix and let it come to a boil.
6. Add bay leaves, fish sauce, sugar, a pinch of salt, and pepper to taste. Mix together.
7. Lower the heat to medium. Cover and simmer for 1½ to 2 hours, until the meat is tender. Skim off the fat layer that pools on the surface.
8. Mix in potatoes and carrots. Cook for 10 to 15 minutes until almost tender.
9. Add bell peppers, pickles, olives, liver spread, and ground pepper to taste. Stir and continue cooking for 5 minutes.
10. Give it a taste and turn off the heat.

INGREDIENTS:
- 2 + 1/2kg pork belly
- 1/4kg pork liver
- 2 cans liver spread
- 7 pcs hotdogs
- A handful of raisins
- 3 spoons sugar
- 3 pcs carrots & 2big potatoes
- 1 red & 1green bell pepper(medium size)
- onions
- garlic
- 2 tbspn oyster sauce
- 1/2 of mama sita’s menudo mix
- 1 beef cube or pork cube
- 3 1/2 cups water
- salt
- tomato sauce
- 4 tbsp fish sauce
PORK MARINATE OVERNIGHT:
- 5tbsp soy sauce
- 1whole lemon
- 1 spoon ground black pepper
